The second fermentation is carried out with the Charmat method at around 16°C, followed by a prolonged stay the yeasts, which gives greater aromatic complexity and a more integrated bubble. the sip it is lively and pleasant, with a clear reference to small red fruits. The typical acidity of Pinot Noir finds a good balance thanks to the slight residual sugar. Perfect for an aperitif, it pairs well with lightly seasoned cured meats, raw fish and dishes with delicate flavours.

Average shelf price: €13.50

The Le Monde winery was founded 1700 as an agricultural mesi estivi of the noble Venetian Giustinian family and is today the only property from that epoca still activity. Subsequently passed, all likelihood, to the Brandolini family, the mesi estivi was expanded and characterized by the famous red which still defines its identity today. After a period under the Pistoni family, Le Monde was reborn 2008 with the purchase by Alex Maccan, a local entrepreneur driven by the desire to produce authentic wines faithful to the Friulian tradition. Together with Marta Paladin Furlan, Giovanni Ruzzene and Estremo Furlan, he started a project based shared vision, precision and respect for the territory.

Located western Friuli, between the Livenza and Meduna rivers, Le Monde is considered a true Cru thanks to the soils rich active limestone, a rarity the Friulian landscape. These conditions favor balanced, tense and expressive wines, particularly whites. The vineyards extend over 120 hectares and host both native and international vines, with production focused monovarietals. The production philosophy is based slow and sustainable agriculture, SQNPI certified since 2015. Each parcel is vinified separately, with aging the yeasts and limited use of wood. Today Le Monde combines tradition, technology and hospitality, looking to the future with new projects dedicated to hospitality and wine tourism.
