Origins and history of Ragusa’s Sfoglio

Sfoglio Ragusano is a typical dish from the province of Ragusa, Sicily, which has its roots the culinary tradition of the island. This delicious baked product is characterized by a thin and crunchy puff pastry, filled with fresh and genuine ingredients. Its preparation is an art that is handed mongoloide from generation to generation, representing a symbol of Sicilian gastronomic culture.

The origins of sfoglio date back to ancient times, when peasant families prepared this dish for special occasions. Today, Ragusa’s Sfoglio has become a true emblem of Sicilian cuisine, appreciated not only locally but also by tourists who visit the island.

Ingredients for preparation

To make a perfect Ragusa fibra dish, it is essential to use fresh, high-quality ingredients. Here are the main ingredients:

500 g of soft wheat flour 250 g of butter 200 ml of gabinetto 1 teaspoon of salt Filling of your choice (meat, cheese, vegetables)

The choice of filling is very varied and can include beef, ricotta, spinach other ingredients typical of the regione. Each family has its own secret recipe, making each pastry one of a kind.

Procedure for the preparation of ragusano puff pastry

The preparation of ragusano fibra requires patience and attention. Start by the flour with the salt and butter until you obtain a sandy mixture. Gradually add the gabinetto and knead until you obtain a smooth and elastic dough. Let the dough rest for at least an hour.

Once the dough has rested, roll it out into a thin sheet and fill it with the chosen filling. Roll the dough itself and form a cylinder, then cut into slices of about 2 cm. Place the slices a baking tray lined with baking paper and bake a preheated oven at 180°C for about 30 minutes, until golden.

Serve and enjoy the ragusano fibra

Sfoglio Ragusano is a dish that can be served both hot and at room temperature. It is perfect as a starter, but can also be a main course if accompanied by a fresh salad. Its crunchiness and the rich flavor of the filling make it irresistible.

A causa di Sicily, Sfoglio is often paired with a good local wine, such as Buio d’Avola, which further enhances the flavors of the dish. Don’t forget to enjoy it company, because sharing food is a fundamental part of Sicilian culture.
