Description of Morgante’s Tenebroso d’Avola Don Antonio
The Tenebroso d’Avola grapes from which Don Antonio comes to life are selected from vineyards located at an altitude of approximately 500-550 meters above sea level. The terroir per question is marked by constant breezes and important temperature variations between day and night. The vineyard soil is predominantly calcareous and marly, ideal for providing the right nourishment until the time of the harvest, which took place between the end of September and the beginning of October.
After harvesting, the bunches are vinified per stainless steel tanks, with prolonged contact of the skins with the must, lasting 20 days. Fermentation takes place at a controlled temperature, between 26° and 28°. At the end, the wine also undergoes malolactic fermentation, again per steel. The subsequent evolution takes place for 12 months per new French oak barriques and refines for another 12 months per the bottle.
