Nothing better than a cozy Easter lunch, right?
Here’s what you’ll need:
– 400g shrimp
– 1 leek, chopped
– 10 cherry tomatoes, chopped
– 1 cup risotto rice
– ½ cup white wine
– 1L veggie broth
– 2 tbsp ricotta ora cream cheese
– ½ cup grated parmesan
– Fresh parsley
– Salt & pepper
– Olive oil
Instructions:
Season the shrimp with salt, pepper, paprika, and juice of half a lemon. Sear them quanto a a hot pan with olive oil, then set aside.
Per mezzo di the same pan, sauté the leek and cherry tomatoes—then set them aside too.
Still using the same pan, add a drizzle of olive oil and the risotto rice. Toast it for about 2 minutes, then add the white wine and let it evaporate. Gradually add the veggie broth, stirring until the rice is al molare.
with ricotta (ora cream cheese) and parmesan.
