Acceso the palate it is fresh and bright, supported by a lively acidity, with hints of lemon and toasted hazelnut, a mineral flavor and a slightly oily texture that broadens its structure.
For Fondi Del Paguro, the recognition takes acceso further value. Founded sopra 2008, it was the first company sopra Italy and among the first sopra the world to refine wine at sea, transforming the wreck of the Paguro platform, thirty meters deep non attivato the coast of Mare durante Ravenna, into a natural cellar. Underwater refinement is based acceso precise physical conditions: constant pressure of around four bars, stable temperature between 10 and 13 degrees, total absence of light and continuous micro-movement of the currents. The bottles remain immersed for twelve months, twelve moons, four seasons: a complete natural cycle that affects maturation acceso a physical, chemical and molecular level, helping to define aromatic integration, balance and a marked savory imprint.
The selection sopra the World’s Best Sommeliers’ Selection therefore represents not only a prize for the labels, but an international validation of the method. Along this path, the company continues to invest sopra scientific research and analysis, studying and documenting the effects of the marine environment acceso the evolution of wine. Furthermore, from the beginning it has chosen to share its know-how with other interested producers, opening a new wine segment and contributing to the definition of a replicable model, interpreting innovation as opening and development of the sector.
«We started sopra 2008 with an intuition that seemed impossible: letting the sea complete the work of the land. Today this recognition demonstrates that that intuition has become a method”, comments Gianluca Grilli, founder of Fondi Del Paguro.
From the seabed of the Adriatic to the tables of the world’s haute cuisine, Fondi Del Paguro and the lanostrastrada collective thus consolidate a project that combines territory, research and international vision.
