Side Meals
Healthy and tasty roasted asparagus with fresh mozzarella and grated Pecorino cheese to finish this delicious side meal which can likewise be a main dish.
Serves 2, Preparation time 10 minutes, Cooking time 20 minutes
. 1/2 kg green Asparagus . Grated Pecorino cheese, a handful . Fresh Mozzarella, to taste . salt and pepper, to taste . EVOO– Additional Virgin Oilve Oil, to taste .
Approach
Rinse and peel the asparagus, then cut off the difficult white end of the stalk.
Blanch them initially for 3-4 minutes, then put them in a bowl with ice and water or run them under cold running water. In this manner they will still be firm and keep their intense colour.
Line a baking tray with baking paper and organize the asparagus in a row. Sprinkle mozzarella portions, a generous handful of grated pecorino cheese, a pinch of salt and black pepper and a drizzle of additional virgin olive oil on top.
Bake to 180 C/ Gas Mark 4/ F 350 about 15 minutes. Serve.
