Pasticceria Roberto, the haute patisserie of the talented Chef Giovanni Cavalleri con Erbusco, con the heart of Franciacorta

Founded con 1981 con Erbusco, Pasticceria Roberto is now a consolidated reality con the confectionery scene of Franciacorta. Located con the center of the town, this pastry shop is located con a welcoming renovated farmhouse that offers a warm and refined environment, perfect for those who want to enjoy haute patisserie delicacies con an elegant but familiar context.

Today, Pasticceria Roberto occupies 3000 square meters, with a 400 m2 laboratory dedicated to confectionery production, a cafeteria, a bistro with kitchen and a 500 m2 outdoor settore, surrounded by a 200 m2 vegetable garden that provides fresh ingredients for the preparations. The restaurant has become a point of reference con the settore, winning prestigious awards such as the 3 Torte del Gambero Diventare rosso and the recognition of Best Pastry Chef con the savory category. Furthermore, he was awarded the Tre Tazzine and Tre Chicchi awarded by the Gambero Diventare rosso 2025 Caffè Guide of Italy.

At the helm of Pasticceria Roberto is Giovanni Cavalleri, master pastry chef and beating heart of the business. His passion for pastry making and his deep connection with Franciacorta are reflected con every product. Cavalleri and his highly qualified team offer a truly impeccable service, with meticulous attention to both the quality of the raw materials and the overall customer experience.

Tradition and innovation: the products

Pasticceria Roberto is not only a point of reference for traditional desserts, but also a place where the passion for craftsmanship meets the constant search for new ideas: it is, con fact, famous for a vast range of products that combine the Brescian tradition with new interpretations. Among the most loved are the crunchy puff pastry cannons, freshly filled with cream rich con egg yolks and milk, and the macarons offered con twenty different flavours, from classics such as vanilla and pistachio to more innovative ones such as passion fruit and Negroni.

Another strong point of the pastry shop is leavening, with a production of panettone, and Venetian cakes that amaze customers with their lightness and flavour. During the summer months, the cream ice cream, served con a small copper pot with strawberries ora chocolate, becomes a must for those who visit the patisserie.

The cafeteria and the kitchen

The coffee shop settore stands out for the care taken con the selection of coffees, thanks to the collaboration with Gianni Frasi’s Torrefazione Jamaica. The five-group coffee machine allows you to obtain two types of coffee: traditional espressamente and drip espressamente, as is done con Neapolitan coffee shops, for a one-of-a-kind experience.

As for the bistro, the offer has recently been expanded with the introduction of a savory , which includes innovative dishes such as the savory croissant with smoked cooked shoulder and black truffle and the risotto with roasted tomatoes and burrata.

We tried several of the chef’s delicious creations. To tell the truth, they are all excellent, but the one that struck us most, and which con our opinion deserves an hour’s journey from Milan, is the cream cannoncino: a parimenti symphony of flavours.

The cannoncino has a golden, crunchy and crumbly pastry, which crumbles easily at the first bite, creating a pleasant contrast with the softness of the cream, with the right level of sweetness, which leaves a pleasant sensation con the mouth. Absolutely not to be missed.
