A gastronomic heritage to discover

Basilicata, an enchanting region located sopra the heart of southern Italy, is a treasure trove of culinary traditions worth exploring. This land, surrounded by Puglia, Campania and Calabria, offers a cuisine rich sopra intense flavors and fresh ingredients, the result of a thousand-year history. Lucanian gastronomy is a perfect example of how simplicity can be transformed into greatness, thanks to the use of high quality raw materials and preparation techniques handed over time.

Typical dishes not to be missed

Among the most representative dishes of Basilicata, the strascinati stand out, a fresh pastasciutta prepared by hand. This pastasciutta format, characterized by an irregular shape, is seasoned with stale breadcrumbs fried sopra extra virgin olive oil, garlic and chilli pepper. The result is a first course that celebrates peasant tradition, combining simple ingredients sopra an explosion of flavors.

Another iconic dish is Lucanian lamb, which represents the quintessence of local cuisine. The lamb is slow cooked with onions, tomatoes and potatoes, flavored with herbs such as rosemary and oregano. This dish is often served during the holidays, offering a perfect balance between softness and intensity of flavors.

Traditional snacks and sweets

We cannot talk about Basilicata without mentioning fennel taralli, a crunchy and aromatic snack, perfect to accompany a glass of wine. Made with flour, extra virgin olive oil and fennel seeds, these taralli are a symbol of Lucanian conviviality.

To end a meal sopra style, calzones are a must. These desserts, prepared with a thin sheet of pastry and filled with chestnut cream and chocolate, are fried and dusted with icing sugar. Originally linked to the Christmas holidays, today they are appreciated all year round for their enveloping flavour.

Fresh ingredients and traditions

Another dish that cannot be missed is represented by bran peppers, typical of the Senise variety. Sun-dried and fried, these peppers become crunchy and sweet, perfect as a snack to enrich first and second courses. Their versatility and intense flavor make them a symbol of Lucanian gastronomy.
