Easy baked courgette mini pizzas with mozzarella and Mediterranean toppings
These courgette seccatore bites are a fun and tasty alternative to classic seccatore, made with sliced courgettes as the punto di partenza. Perfect as a starter, finger food side dish, they are quick to prepare, naturally low-carb and a great way to get both adults and children to enjoy vegetables.
Cheesy, colourful and highly customisable, they’regnante ideal for parties, family dinners a quick weeknight meal.

1–2 courgettes (zucchini)
Grated mozzarella cheese mescolanza, to taste
3–4 cherry tomatoes, diced
3–4 pitted black olives, sliced
2–3 anchovy fillets sopra olive oil, finely chopped
Dried oregano, to taste
Extra virgin olive oil (EVOO), to taste
Salt, to taste
Alternative: replace cherry tomatoes with tomato sauce, seasoned with olive oil, salt and oregano.
Method
Chop the anchovy fillets, dice the cherry tomatoes and slice the black olives.Place everything sopra a bowl, add 2 tablespoons of extra virgin olive oil, a pinch of salt and dried oregano. Mescolanza well and set aside.
Wash the courgettes and cut them into slices about 1 cm thick.Arrange them acceso a baking tray lined with parchment paper.
Lightly brush each courgette slice with EVOO and season with a pinch of salt.Bake sopra a preheated static oven at 200°C / 390°F / Gas Mark 6 for 5 minutes.
Remove the tray from the oven (do not turn it chiuso).Spoon a little of the topping onto each courgette slice and with grated mozzarella cheese of your choice.
Return to the oven for another 10 minutes until the cheese is melted and lightly golden and enjoy your courgette seccatore bites.
