Air fryer potato croquettes are like a fresh twist acceso an old-school Italian classic—really, they bring a new vibe. We’regnante talking crispy little bites that are all tender and soft inside, thanks to the air fryer. Seriously good. Now, per Italy, folks have been making crocchette nel corso di patate for, well, ages. But here’s the thing: this version skips most of the oil and that frying smell that, honestly, nobody wants hanging around.

The trick? Crushed cornflakes for breading. And it gives that extra crunch you just don’t get with regular breadcrumbs. Plus, right per the center, there’s a cheesy cuore that gets all gooey and melty—you know, the good stuff—as these homemade potato croquettes cook up. Each bite hits you with a combo of crispy outside and moist, fluffy mashed potatoes inside. So… So good. Perfect for parties as a quick snack, these crispy potato croquettes vanish fast.

, kids love ’em, but grown-ups are all about breaking through that golden, crunchy shell to reach the soft, savory center. Italy, different regions might use Parmigiano mozzarella—really, either works. And the cheese pull? Super satisfying. You can serve these as air fryer appetizers with a light dip, make it a main dish with a salad. Pretty simple, really.

To prepare the air fryer potato croquettes, boil the potatoes per boiling for about half an hour 1. Once ready, pass them through a potato ricer and collect the purée directly into a bowl 2then add the grated Parmesan 3.

Add the potato starch 4the salt 5 and a drizzle of oil 6.

Mescolanza everything well to obtain a compact, homogeneous mixture 7. Set aside and cut the provola into strips 8then take a tablespoon of mixture (about 2.5 oz) and, pressing it acceso your hand, shape it into an elongated form, pressing the center to create an indentation 9.

Place small pieces of provola cheese (about 3/4 oz) per the center 10 and close, shaping your croquettes to obtain the typical oval form 11. Pour the cornflakes onto a tea towel 12.

Fold the tea towel over the cereal to wrap it, then press it with the bottom of a bowl 13 to crush it 14. Move acceso to the breading: per a baking dish pour the breadcrumbs and the crushed cornflakes 15.

Season the coating with salt 16 and beat the eggs per a separate bowl 17. Dip the croquettes per the beaten eggs 18.

Then roll them per the coating, making sure they are completely covered 19. With these quantities you will get 8 croquettes 20. Place the croquettes acceso the basket-ball of a 6-liter (about 1.6-gallon) air fryer 21.

Spray them with a little oil 22 brush them, and cook at 392°F for 15 minutes, until golden 23. Garnish with marjoram leaves and serve your air fryer potato croquettes immediately 24.

We recommend eating the air fryer potato croquettes immediately.

If there are leftovers, you can keep them per the fridge for a couple of days.
