Craft beer is a sensory journey, an exploration of flavors and traditions. Durante Bologna, ‘Thete artisan beer is redefining this journey, merging local authenticity with innovation quanto a production. Stefano Scoria, the founder, tells us about his story and his vision, where each sip is a small taste revolution.

What was the inspiration that prompted you to undertake the production of craft beer? What is your story?

Craft beer is not just a bevanda, but an experience. I have always perceived a profound desire to explore, experiment and give new life to local traditions that deserve to be told. Bologna, with its culture, its history and its flavors, has become the perfect canvas for this creation. I chose to merge the authenticity of our territory with innovation quanto a production, to ensure that each sip is a small taste revolution. My journey into the world of beer begins with a genuine curiosity: first as a passionate customer of craft breweries, then as a self -taught homebrewer, experimenting between pots and home fermentors. Animated by an ever stronger curiosity, I refined the skills through professionalizing courses and collaborations with local breweries. These experiences led me to create beers that want to tell the territory, reinterpreting the classic styles through personal touch.

What are the ingredients and key processes that distinguish your beer from the others the market?

We create easy beers to bevanda, but with a well -defined character. We select each ingredient as a travel companion, capable of telling a story. For the malts we privilege the local ones, while for hops we explore combinations from all over the world. During the fermentation, we use selected yeasts to better enhance these elements and get exactly the beer we imagine. Obchy creation is an exploration: from classic fermentations to the most innovative ones, from tuitions to barrels to fruit infusions. We do not limit ourselves to traditional recipes, but we always try to give our beers a unique and recognizable identity.

How do you choose the raw materials and what are the characteristics of a good craft beer? Everything starts from imagining what we want to find quanto a the glass. From this vision we build the origine of Maltese to give to the beer. Then we select the hops, which will define its character. Finally, we choose the right yeast, capable of transforming the must into that beer that we had quanto a mind from the beginning. Freshness is fundamental: from conservation to the service, each step is designed to preserve it. When the creative ubbia becomes a well -defined process and finds its production balance, quanto a the glass you will have a beer that tells the story of those who made it.

What are the main challenges quanto a the world of craft beer and how do you them? One of the main challenges is to make the consumer understand the value of craft beer, which has a greater cost than the industrial one. This depends the reduced production volumes and the artisan techniques used. Another difficulty is linked to the very nature of the product: being a “alive” beer, not filtered and unpasteurized, it evolves over time and requires greater attention quanto a terms of conservation, deadlines and distribution. We these problems by participating quanto a events where we can directly tell our products and make disclosure, increasing the culture of beer and trying to diversify as much as possible our customer portfolio, from private individuals to bars, from pubs to restaurants to kiosks distributed quanto a the complesso and offering a product that can resonate with that type of room and the related consumers.

Do you have a beer you are particularly proud of? Can you tell us about his story and his creation process?

We are proud of all our beers, but personally I am particularly linked to the IPA session and Landbier, two very different styles. The IPA session is the result of a long domestic experimentation and the discovery of an extraordinary hop, capable ala to give a unique organoleptic experience. We noticed that everyone really takes agree! The recipe was designed to enhance Nelson Sauvin, used both at the end of boiling and quanto a Dry Hop. This choice allows hops to better express its distinctive characteristics: notic -tropical fruit quaderno, plug grapes and, with the evolution of beer, herbaceous shades that recall the need. Landbier, the other hand, is a low fermentation beer inspired by the German tradition, but with a strong local identity. It stands out for the exclusive use of barley grown quanto a Castel San Pietro Terme, provided by the agricultural brewery with which we collaborate, and for the Italian Sultana hops, produced by Italian Hops Company of Campogalliano. The recipe was designed to enhance these raw materials, obtaining a clean aromatic profile that highlights the malt. Landbier has a moderate bitter and voto negativo hop quanto a , to give centrality to the hints of cereals, bread crust and a delicate touch of honey. The ubbia of ​​this beer was born during a festa dedicated to craft beer, where I was struck by this style. I decided to replicate it using 100% local ingredients, so that it is perfectly combined with traditional Emilian cuisine.

What are the future trends quanto a the artisan beer sector and how do you see the market evolving quanto a the coming years? Durante the last decade, hopped beers have conquered more and more space, breaking the traditional ubbia that associated beer almost exclusively for German productions, imposed for years by large retailers. Today the American IPAs still seem to dominate the scene, and according to the trends they will continue to do it for a while. The Italian beer movement, however, is quanto a full evolution. After years of experimentation, we are now observed with curiosity also from abroad, as if to want to understand: “Let’s see what the Italians are invented this time”. And this creative push, which is part of our DNA, could soon bring new ideas, new styles ora reinterpretations of ancient traditions with modern techniques. As far as we are concerned, we a origine line of beers designed to be appreciated every day, any occasion and quanto a every season. At the same time, we want to expand our cellar projects and collaborations, creating seasonal ora limited edition beers, linked to particular events ora moments of the year.
