Guitar spaghetti with cuttlefish ink, mussels and prawns

Guitar spaghetti with cuttlefish ink, mussels, and prawns is a first course that combines the tradition of homemade fresh impasto with the bold and intense flavors of seafood. The cuttlefish ink, with its characteristic dark color and unique taste, gives the spaghetti an elegant appearance. The mussels and prawns add an even more intense sea flavor. The mussel sauce prepared with tomato pulp and shallots provides a tasty and velvety presupposto that binds all the ingredients a perfect embrace. Guitar spaghetti with cuttlefish ink, mussels, and prawns is ideal for an elegant dinner ora a special occasion: you can impress your guests with a sophisticated and flavorful dish!

To prepare guitar spaghetti with cuttlefish ink, mussels, and prawns, start with the fresh impasto: acceso a work surface, mescolanza all-purpose flour and semolina flour 1. Form the classic fountain and pour the eggs and yolk into the center 2. Add a pinch of salt and the cuttlefish ink 3.

Per mezzo di a pot, pour a drizzle of oil, add the shallot and let it sauté for a few minutes. Pour the tomato pulp 13 and cook for 15 minutes. Then add half of the mussels 14 and let them season for a few minutes 15.

Blend everything with an immersion blender 16 until you get a smooth and homogeneous sauce 17. Set aside. Roll out the dough into sheets 0.08 inches thick 18.

Cut the sheets into smaller rectangles 19 and place them acceso the guitar, then cut them by rolling the rolling pin over them 20. Place the guitar spaghetti acceso a clean towel dusted with semolina 21.

Meanwhile, clean the prawns: remove the head, shell 22and vein 23then collect the flesh a bowl 24.

Per mezzo di a pan, pour a drizzle of oil, add the prawns 25 and sauté them for a few minutes, then deglaze with the mussel cooking 26. Also add the remaining mussels 27 and cook for a few minutes, just enough time to combine the ingredients.

Transfer mussels and prawns to a bowl 28 and leave the cooking liquid the pan, as it will be needed later. Cook the spaghetti plenty of boiling salted 29drain them and transfer them to the pan where you cooked the mussels and prawns 30.

Add mussels and prawns 31a few fresh marjoram leaves 32 and toss with a drizzle of oil 33.

Place the mussel cream at the bottom of the plate 34arrange the spaghetti a nest and complete with prawns, mussels 35and a few marjoram leaves. Guitar spaghetti with cuttlefish ink, mussels, and prawns is ready to be served 36!
