COMPONENTS:
– minced pork (1 Kilo) 700g Lean Pork Loin & 300g Pork Stomach. You can ask your butcher to mince somewhat bigger pieces or cut a piece of shoulder of pork in the house into little pieces!
– Sea salt to the weight of the meat (29g).
– 1 teaspoon vinegar.
– 1 teaspoon fennel seeds.
– 1 teaspoon black pepper.
– 10 black peppercorns.
– 20ml Red White wine leave a garlic & Clove in it overnight.
– Hog sausage cases – ask your regional butcher for some.
– If you like it spicy include some chilli flakes.
