Frittata? It has actually constantly been the delicious and fast response to a last-minute lunch, however the frittata can be abundant and tasty, like our potato and artichoke frittata! An easy-to-prepare vegetarian main dish with our dish that includes cooking veggies and eggs in a single pan. We included the common side meal of artichokes and potatoes to the homemade frittata, which provides this meal an additional kick. Enjoy it as a seasonal main dish or in little bites at an aperitif like the artichoke, mushroom and smoked bacon frittata. If the mix of artichokes and potatoes is to your preference, do not miss out on other intriguing meals that will boost your menus:

Potato flan with artichoke salad.
Mini beef, potato and artichoke pies.

To prepare the frittata, start by cleaning up the artichokes, getting rid of the external and harder leaves 1 peeling the stem 2 (reducing it if long), and after that cutting the ideas 3

Cut them in half lengthwise. Now eliminate the choke 4 and scrape any internal ideas. Slice the quarters very finely, about a quarter inch 5 and put the artichokes in acidulated water with lemon while you continue with the preparation. Peel the potatoes 6

Cut them in half and slice them very finely 7 In a non-stick pan, include a splash of oil and taste the base with a crushed clove of garlic in its skin 8 Include the artichokes 9

Include the potatoes 10 and a pinch of salt, stir and prepare over high heat for 4-5 minutes. Then cover with the cover 11 and continue for another 10-12 minutes at a lower temperature level. At this moment, the veggies will be soft and well-cooked and you can eliminate the garlic. On the other hand, in a bowl, beat the eggs with the cheese 12

Season with a little bit of salt 13 pepper, and thyme. Put the mix over the potatoes and artichokes 14 Cover with the cover 15 and cook for about 7 minutes.

Utilize the spatula to compact the frittata and make it well-rounded 16 Turn the frittata and prepare it on the other side for about 4-5 minutes 17 without the cover. Lastly, slide it onto a serving plate 18 and enjoy it warm or hot.
