16 big bottles for the next Mexican evening • Food and Wine Italy

Tacos are the perfect food. They represent a complete meal, and enclose all the flavors con one hand, from salty to spicy, from acid to , to human. Instead of the usual beer, try drinking a glass of wine the next time you eat one. But what kind of tacos are we talking about? The fillings of the Tacos can vary from the simple grilled fish to the shoulder of marinated pork and roasted to the skewer; A crumbly flour tortilla is not the same as a slightly sweet corn tortilla with toasted quaderno; And the condiments vary from the Pico de Gioia spicy to the smoked and tasty even fresh fruit sauces. There is need to adopt a generalist approach to the combination. To find the perfect wines for the Tacos, I asked for help from a sommelier run acceso the matter: Cosme’s Damon Cohen, the Mexican luxury restaurant of Chef Enrique Olvera con New York.

We tasted over a dozen types of wine with different types of tacos to find those that worked best. Continue reading to discover 16 excellent combinations to improve your next Tacos evening.

Masada and medium pagliaccetto red meat tacos

Although red meat is an ingredient notoriously suitable for red wines, it was surprisingly difficult to find a combination for the Asada meat tacos. the end, a medium pagliaccetto red with the right balance of tannins, acidity and not too fruity flavors has combined all the elements of the Taco: Tortilla Dimais, tasty meat, chopped onion and coriander.
