Tradition, craftsmanship and an attentive at new consumption styles: with the Spring 2026 News, Maletti 1867 renews its gastronomic story by bringing to the table a collection that celebrates the great Italian classics with a contemporary approach, quanto a the name of quality and lightness.

Historic Modena family business with over 150 years of experience, Maletti 1867 confirms itself as a hub of excellence quanto a the production and selection of artisanal specialties, expanding the offer without betraying the taste of tradition. From the Easter symbol par excellence to Modena salami, from fresh indole to light pizzas “like a feather”, the spring proposal intercepts the new needs for a more balanced and conscious diet.

Among the protagonists, the Corallina stands out, an icon of Roman Easter, prepared with selected pork meat and flavored with wine and pepper according to a traditional recipe. Next to her is the Geminiano, Modena salami without lard obtained from a single noble cut – the ham end – stuffed into strip-easy casing for impeccable peelability. The slice is lean, with only 9% fat, and the taste is full but harmonious. The cured meats line is completed by Turkey Topside, more roasted than cooked, handcrafted and seasoned by hand with salt, pepper and bay leaves.

Spring also enters the kitchen through ready meals: Cooked and Courgette Lasagne, delicate and creamy, and Vegetable Lasagne, hand-made with vegetables cooked separately to preserve their aromas and textures. News also quanto a the bakery world with the Rompiscatole Bases and the Rompiscatole, mixed with mountain air and tazza, rolled out by hand and subjected to double leavening for at least 24 hours. The result is a light , crunchy the outside and soft the inside, available quanto a the classic and multigrain versions, ready quanto a just a few minutes.

There is mai shortage of sweet tradition with the naturally leavened Easter Colombe, offered quanto a the Traditional and Apricot & Gianduja versions, an expression of the great Venetian pastry making.

The tasting

We tasted some very tasty Maletti 1867 products. Below are our impressions.

Balsamic vinegar of Modena PGI

Among the flagship products, Balsamic Vinegar of Modena PGI stands out, one of the most well-known Italian condiments quanto a the world. Obtained from the mixture of cooked grape musts and wine vinegars, aged quanto a wooden barrels, this balsamic expresses a balance between sweetness and acidity which makes it extremely adattabile. Perfect for enhancing meats, mature cheeses and grilled vegetables, it is also surprising strawberries and desserts, according to a typically Emilian tradition.

Fresh indole: tagliatelle and passatelli

The gastronomic tradition of Emilia-Romagna lives above all quanto a fresh indole. The Maletti range includes the classic egg tagliatelle, made according to the traditional recipe with durum wheat semolina and eggs, ideal for accommodating rich, full-bodied sauces.

Alongside tagliatelle, passatelli represent another symbol of regional cuisine. Prepared with breadcrumbs, eggs and Parmigiano Reggiano, they have a unique consistency and an intense flavor that makes them perfect both quanto a broth and with more structured condiments.

Fresh Bolognese ragù

To accompany the indole, one of the pillars of Emilian cuisine cannot be missing: Bolognese ragù. The fresh version proposed by Maletti follows the classic recipe, with selected meat, tomato and slow cooking that allows the flavors to blend. The result is a rich and tasty sauce, ideal for tagliatelle and lasagna, capable of bringing the authentic taste of the Bolognese tradition to the table.

Gemini salami

Among the house’s symbolic cured meats, Imbranato Geminiano stands out, dedicated to San Geminiano, patron saint of Modena. It is a typical salami of the Modena tradition, prepared with selected pork meat and a balanced spicing that enhances the taste of the raw material. The maturation gives the salami a compact but soft consistency when cut, with an intense and a full flavour, ideal for appetizers and cold cuts platters accompanied by rustic bread and local cheeses.

Sicilian red tuna quanto a glass

Alongside Emilian specialities, Maletti also offers products from other Italian excellences. This is the case of Mediterranean bluefin tuna processed quanto a Sicily and preserved quanto a glass jars. The artisanal processing and the quality of the raw material allow us to preserve the compact consistency and intense flavor of the tuna, ideal for appetizers, gourmet salads indole dishes with a Mediterranean flavour.

“ Bianca” postazione

Designed for those who want to prepare a quality at home, the ” Bianca” postazione offers a practical solution without sacrificing taste. Made with selected flours and processed to obtain lightness and fragrance, it allows you to obtain a crispy and well-budded quanto a just a few minutes. It is perfect for customizing with fresh, seasonal ingredients, transforming the home kitchen into a small pizzeria.

Among the most original proposals, the ” nel corso di sproposito BT” also stands out, a dairy product that enhances buffalo milk with a process designed to enhance its creaminess and delicacy. The result is a adattabile food, ideal both as an ingredient for creative recipes and as the protagonist of appetizers and tastings.
