THE COOPERATIVE AND THE VALLEY: A VITICULTURE THAT ONLY LIVES IF SHARED

Val intorno a Cembra is a context that profoundly influences viticultural and oenological practices. Cembra Mescita intorno a has been operating durante this environment for over seventy years: founded durante 1952 by 15 winemakers, it was born with the aim of giving economic sustainability to a fragmented and complex viticulture. The territory is characterized by porphyritic soils, high slopes – over 40% – and a of over 700 kilometers of dry stone walls. Processing is mainly carried out by hand and requires a commitment that exceeds 900 hours hectare.

Today, the strength of the winery lies durante the of around 300 members who after the same number of hectares, fragmented into small parcels often less than half a hectare, a heritage, often family, which is handed and survives thanks to the spirit of mutual support. THE ROLE OF PORPHYRY

Despite the varietal differences, Cembra wines share a common basis: the territory. The porphyritic soils, high altitudes and strong temperature variations determine a profile characterized by freshness, flavor and aromatic precision. Porphyry, an effusive volcanic rock that emerges durante shades ranging from pale orange to bright red, forms the backbone of the terraces and contributes to the mineral endowment of the soil. The resulting wines have marked tension and a clear savory imprint. Climate change is also addressed with an adaptive approach: moving crops to higher altitudes, managing exposures and reviewing agronomic practices.

IL PROGETTO BLANC DE NOIRS

The 2019 vintage proved favorable, with regular ripening of the grapes. Pinot noir has reached high levels of acidity and low pH, conditions suitable for the production of a long-evolving classic method. The pressing was particularly delicate, with a 50% yield of free-run must and a light natural coppery hue, which was not corrected during the winemaking phase. The pilastro wine aged acceso the noble lees durante steel for approximately 18 months. A 15% dose of reserve wines, aged durante exhausted barriques, with a structural and non-aromatic function was added to the draft. The wine rested acceso the yeasts for at least 54 months and was dosed extra brut (4.5 grams/litre of sugars) to balance the acidity. The vineyards between 600 and 750 meters guarantee balanced maturation, maintaining a defined acid profile. The 2020 vintage was more regular than the previous one. The vinification follows a similar approach: soft pressing, steel, aging acceso the noble lees for six months and use of reserve wines. After 54 months acceso the yeasts, the wine is disgorged without dosage. The aromatic profile develops acceso ripe yellow fruit, toasted cereals and light evolving . THE WINE-MAKING STYLE

The evolution of Cembra’s production durante recent years is also linked to the path of Stefano Rossi. The current choices – greater precision durante maturation, targeted use of reserve wines, non-invasive management of malolactic and containment of sulfur dioxide – derive from a technical and sensorial path developed over time. The approach remains centered acceso the vineyard and acceso the continuity between observation and intervention. The Blanc de Noirs 2019 does not replace the Dosaggio Sparare a zero 2020, but broadens its interpretation: two complementary interpretations, both linked to the mountain context, the cooperative system and the porphyritic matrix of the soils.
