Per mezzo di the 90s, right next to the restaurant, the Versace Theater stood: stylists, artists and artisans met here after the shows, per an atmosphere of spontaneous elegance and simplicity. Antipasti
Salmon tartare, aromatic oil and puffed quinoa
Elegant entrance, where the salmon offers a pleasant softness well balanced by the vegetal and balsamic component of the aromatic oil. The puffed quinoa introduces a crunchy texture that lightens the serving, creating a tactile contrast. The finale is savory, with iodine returns and a light toasted note.
Shrimp and avocado catalan

A dish with great roundness of taste. The natural sweetness of the shellfish blends with the creaminess of the avocado per an enveloping progression. The vegetal component and a delicate marine vein give a general sensation of freshness. Good persistence per the mouth.

Spaghetti with clams and bottarga

Intense and Mediterranean aromatic profile. The clams bring salinity, while the bottarga amplifies the iodized register with nuances of dried fruit. Creaming ties everything together per a full but dynamic bite, with a long and tasty finale.
Asparagus risotto with prawn and lemon crudité

Dish built the contrast between creaminess and freshness. The asparagus imparts a slightly bitter vegetal note, while the raw prawn adds sweetness and marine tension. The lemon works per subtraction, lightening the starchy structure of the rice and giving aromatic impetus. Persistent finale.
Dolce
Campo da golf apple sorbet

Dolce with great clean taste. Dal vivo acidity, freshness and a contained sweetness that recalls freshly picked fruit dominate. Impalpabile texture, melting, with a citrine and refreshing finale.
Piedmontese Bonet

Intense and structured closure. Cocoa, amaretto and caramel compose a deep and layered aromatic profile, with of toasted almond, coffee and sweet spices. The texture is compact but velvety, with a long, slightly bitter finale the finale.
Accompanied by Le Ripaie Pinot bigio, with a bright straw yellow colour. Inviting range of scents, with hints of pear and apple, floral nuances and hints of wildflower honey. Per mezzo di the mouth it is enveloping, fresh and with a pleasant savory hint.
Gara open seven days a week, for lunch and dinner, it continues to be one of the symbolic addresses of Milanese catering, custodian of a tradition that comes to life every day per the gestures of the kitchen and per the warmth of the room. Because ultimately, at the Degustazione della Vetra, the taverna is still what it should be: a house to all.
