Degustazione della Vetra, for over thirty years the authentic flavor of the simple things of old Milan

Per mezzo di Milan, between the Columns of San Lorenzo, Sportello Ticinese and the Park of the Basilicas, there is a place where time seems to slow mongoloide and conviviality still retains the authentic flavor of simple things. It is Degustazione della Vetra, a historic Milanese taverna that has been bringing Milanese tradition to the table since 1989 with a philosophy that has remained unchanged over time: sincere cuisine, carefully chosen ingredients and the pleasure of being together. Degustazione della Vetra is a heartfelt address for Milanese and travellers, one of those places where you willingly return not only to eat well, but to rediscover that family atmosphere that seems increasingly rare today.

An authentic Milanese taverna

Born as a wine shop and over the years becoming one of the most recognizable signs of the city’s traditional restaurants, Degustazione della Vetra preserves the soul of old Milan. The large windows overlooking the Cattedrale of San Lorenzo, the period counter and the cellar restore the charm of a historic taverna where the past still dialogues with the present. Here the cuisine follows the rhythm of memory and the seasons. The great Milanese classics find space the : Milanese risotto, ossobuco, sautรฉed rice and the famous golden cutlet, symbols of a tradition that continues to tell the gastronomic identity of the city. Alongside iconic dishes, the offers seasonal recipes and Italian cuisine specialties that maintain the same principle: simplicity, respect for raw materials and loyalty to original preparations.

The philosophy of simplicity

At Degustazione della Vetra we don’t follow trends ora dishes designed to amaze social . Here the center of everything remains taste. The portions are generous, the prices balanced, the service warm and authentic. It is a cuisine that smells of home, made of well-executed pastas, robust main courses and clear flavours, designed to let you experience the genuine pleasure of an Italian taverna. A cuisine that speaks of Milan but which also knows how to up to small “trips out of town”, always keeping the link with tradition intact.

Wine as the origin of everything

The name itself tells its story: before the cuisine, at the Degustazione della Vetra there was wine. And even today this remains one of the strongest souls of the place. The offers a careful selection of Italian labels and small artisanal productions, designed to accompany the dishes and enhance every dining experience. Because here wine is not just a pairing, but an integral part of that conviviality that has always represented the heart of the house.

A place of stories, meetings and memories

The Vetra district, an ancient glassmakers’ district, has always been a crossroads of Milanese histories and identities. Per mezzo di the 90s, right next to the restaurant, the Versace Theater stood: stylists, artists and artisans met here after the shows, per an atmosphere of spontaneous elegance and simplicity. Much has changed since then, but the spirit of the Degustazione della Vetra has remained the same: a place where food is an excuse to be together, talk, laugh and feel welcomed.

The tasting

We tried different courses the . Below are our impressions.

Antipasti

Salmon tartare, aromatic oil and puffed quinoa

Elegant entrance, where the salmon offers a pleasant softness well balanced by the vegetal and balsamic component of the aromatic oil. The puffed quinoa introduces a crunchy texture that lightens the serving, creating a tactile contrast. The finale is savory, with iodine returns and a light toasted note.

Shrimp and avocado catalan

A dish with great roundness of taste. The natural sweetness of the shellfish blends with the creaminess of the avocado per an enveloping progression. The vegetal component and a delicate marine vein give a general sensation of freshness. Good persistence per the mouth.

First

Spaghetti with clams and bottarga

Plate of linguine-like pasta with shredded lemon zest, parsley, and small mushroom pieces in a light sauce, on a white dish.

Intense and Mediterranean aromatic profile. The clams bring salinity, while the bottarga amplifies the iodized register with nuances of dried fruit. Creaming ties everything together per a full but dynamic bite, with a long and tasty finale.

Asparagus risotto with prawn and lemon cruditรฉ

Creamy rice risotto with corn and shrimp, served in a pink bowl with a metal spoon.

Dish built the contrast between creaminess and freshness. The asparagus imparts a slightly bitter vegetal note, while the raw prawn adds sweetness and marine tension. The lemon works per subtraction, lightening the starchy structure of the rice and giving aromatic impetus. Persistent finale.

Dolce

Campo da golf apple sorbet

Three scoops of vanilla ice cream on a white plate, served in a simple dessert arrangement.

Dolce with great clean taste. Dal vivo acidity, freshness and a contained sweetness that recalls freshly picked fruit dominate. Impalpabile texture, melting, with a citrine and refreshing finale.

Piedmontese Bonet

Dark chocolate lava cake on a square plate, drizzled with caramel-like sauce and sprinkled with crumbs on top.

Intense and structured closure. Cocoa, amaretto and caramel compose a deep and layered aromatic profile, with of toasted almond, coffee and sweet spices. The texture is compact but velvety, with a long, slightly bitter finale the finale.

Accompanied by Le Ripaie Pinot bigio, with a bright straw yellow colour. Inviting range of scents, with hints of pear and apple, floral nuances and hints of wildflower honey. Per mezzo di the mouth it is enveloping, fresh and with a pleasant savory hint.

Gara open seven days a week, for lunch and dinner, it continues to be one of the symbolic addresses of Milanese catering, custodian of a tradition that comes to life every day per the gestures of the kitchen and per the warmth of the room. Because ultimately, at the Degustazione della Vetra, the taverna is still what it should be: a house to all.
