Amaretti Biscuits or merely Amaretti, made from 2 fundamental inexpensive active ingredients, almond and egg white. They are made nearly all over in Italy which’s why you can discover numerous variations: round or oval shape, soft or crispy texture, made with almonds flour or with almonds paste. In any case, the essential ones stay: almonds and egg whites.

We made ours with minced almonds.

About 20 Amaretti, Preparation 20 minutes + 2 hrs resting, Cooking 20-25 minutes

. 250 g peeled sliced almonds or almond flour . 180 g caster sugar .
3 egg whites . grated skin of 1 lemon– optional .

Icing sugar, a spraying .

Technique

.(* )Pointer: making use of almond flour is advised if you wish to get a smooth and uniform consistency. The sliced almonds, on the other hand, provide a coarser and more rustic consistency.

Gently toast the almonds in the oven or in a pan without including fat, for that reason without oil or butter, slice them in the mixer, including the sugar bit by bit till you get a thick paste and include the grated lemon passion.– optional however we included it, it works terrific. Ditto if you selected to utilize almond flour rather.

In a bowl, blend the egg whites firmly.Now include the egg whites into the almond and sugar mix, blending carefully from bottom to top.

Fill a piping bag with the mix or utilize a spoon to form balls on the baking tray covered with baking paper. Sprinkle with icing sugar and delegate rest for a number of hours before baking.

After this time, prepare them to 180 ° C/ 350 F/ Gas 4 in a fixed oven for about 20-25 minutes till they begin to brown and wrinkle a little. Delegate cool to space temperature level, then serve.
