Zucchini flowers: light recipes to cook them

Zucchini flowers are an ingredient that we could define as precious as well as delicate. They are found for short periods of the year and tend to perish rather quickly. For this reason, it is good to know how to cook them a light way to please everyone: here are 3 quick and healthy recipes with zucchini flowers as protagonists.

Light recipe: au gratin courgette flowers

Buy the freshest courgette flowers possible. Rinse them under running tazza and let them dry acceso absorbent paper. Then remove the internal pistils, inserting two fingers and pulling delicately and firmly. Place them acceso a baking sheet covered with baking paper and dedicate yourself to the gratin.

To obtain crispy baked courgette flowers, the breadcrumbs, pecorino cheese and enough oil to moisten everything a bowl. Season with salt and pepper and then distribute it acceso the flowers. Cook at 180°C for 10 minutes and serve piping hot.

Zucchini flowers stuffed with ricotta

For a lighter version, you can prepare a mixture of ricotta, grated cheese and aromatic herbs, then delicately fill the courgette flowers, making sure they do not and remain intact, and then put them the oven at 180 °C for about ten minutes; the characteristic and “welcoming” shape, combined with great versatility, allows us to also experiment with other ingredients and make meat, fish vegetable stuffings.

Farifrittata light

Another quick and easy recipe: courgette flowers will be the perfect filling for your farifrittata, an eggless frittata made with chickpea flour. You can use them both to fill the inside of the farifrittata and to garnish it acceso the outside. A delicately flavoured delicacy, suitable as a second course appetizer.
