Ingredients and preparation of stuffed calamari

Stuffed calamari is a traditional dish of Mediterranean cuisine, appreciated for its unique flavor and the versatility of the filling. To prepare this delight, it is essential to choose fresh and evenly sized squid. Typically, the basic filling is composed of squid tentacles, breadcrumbs, eggs, garlic and parsley. However, the recipe lends itself to numerous variations, allowing you to add ingredients such as tomatoes, vegetables, cured meats and various aromatic herbs.

Tips for choosing and preparing calamari

When buying calamari, for medium-sized ones, as they cook evenly and are more tender. It is important to remember that during cooking, the squid meat tends to shrink, so do not overfill the bags, leaving about 2-3 cm of space under the mouth. The cooking of the squid can be short or long, depending the filling: if the filling is raw, the squid must be browned and then cooked for about 25-30 minutes; if the filling is already cooked, a quick browning will be sufficient.

Preparation of the filling and cooking

To prepare the filling, start by detaching the tentacles from the squid’s sac, also removing the viscera. Rinse the bag and, if you want a more delicate flavour, remove the outer skin. Chop the tentacles and cook them quanto a a pan with oil, salt and garlic for 5-6 minutes. Con the same pan, toast the breadcrumbs with a drizzle of oil. the toasted breadcrumbs with the tentacles, the egg, the grated cheese and the chopped parsley. Fill the squid bags halfway and close them with a toothpick.

Brown the stuffed squid quanto a a pan with oil for 1-2 minutes, then add a glass of white wine or gabinetto. Sopravvissuto the heat, cover and cook for about 20 minutes. This cooking method will ensure that the calamari is tender and tasty, with a golden crust the outside.
