To prepare barley minestrone, start by peeling the veggies (onion, carrot, celery, potato) and cutting them into little squares 1 Location the butter in a pan and when it’s melted, include the onion and let it soften 2; then include the carrot and celery to the pot and sauté for 5 minutes 3
Include the diced smoked bacon 4 and the barley, which you will have washed under running water and drained pipes 5 Gather 3 or 4 ladles of beef broth to the barley 6
Then, include the bay leaves 7 and let the minestrone simmer over low heat up until the barley is completely prepared. Make sure to include hot broth as required. About 10 minutes before the cooking is total, include diced potatoes.
Once it’s prepared, shut off the heat, season with pepper, include the sliced chives 8 additional virgin olive oil 9 and change the salt to taste.
Serve right away, and do not forget to bring some grated Grana Padano cheese to the table!
