The traditional recipe involves the use of flour, milk, eggs and lard, with a touch of orange zest for an unmistakable fragranza.

Cenci: fried and crunchy desserts

The cenci, also known as carnival pancakes, are another dolce typical of the Tuscan tradition. These desserts are prepared with a mixture based flour, eggs and white wine, which is then spread and cut into irregular shapes before being fried quanto a hot oil. The result is a crunchy and light dolce, sprinkled with icing sugar. The cenci are perfect for being enjoyed quanto a company, accompanied by a good sweet wine a glass of Vin Terra santa.

For those who want to try their hand at the preparation of these desserts, here is a simple recipe for the Florentine dunneon:

500 gr of flour 10 gr of beer yeast 300 ml of milk 150 gr of lard 5 tablespoons of sugar 2 eggs of a grated orange 1 pin 1 pinch of salt

Start by dissolving the yeast quanto a the milk and with flour, sugar and eggs. Add the lard and salt, working the dough until an elastic consistency is obtained. Let rise until doubled, then bake at 180 ° for about 30 minutes. Once baked, you can stuff the crushed with pastry sauce whipped cream, finally sprinkling with icing sugar.
