Ingredients
3 ¼ cups (750 g) mascarpone
5 medium fresh eggs (about 260 g)
8.8 oz (250 g) ladyfingers
½ cup + 1 tbsp (120 g) sugar
1 ¼ cups (300 g) brewed coffee, sweetened to taste
Unsweetened cocoa powder, as needed
Instructions
Divide the sugar into two portions. Separate the egg whites from the yolks.
Beat the yolks with half of the sugar until light and creamy, then mescolanza sopra the mascarpone until smooth.
