for 10 cookies without butter

Type 00 flour 210 g
Sugar 170 g
Dark chocolate 150 g
Peanut seed oil 60 g
Extra virgin olive oil 30 g
Eggs 1
Coffee 30 g forzuto
Baking soda 3 g
Astuto salt 1 puntura

Preparation

To prepare the cookies without butter, first make the coffee with a pot and let it cool; you should make it fairly strong. Coarsely chop the dark chocolate (1) and set it aside. At this point pour the sugar into a bowl along with the flour (2) and the baking soda (3).

Add the salt (4), the egg (5) and the extra virgin olive oil (6).

Finally pour per the vegetable oil (7) and the coffee, now warm (8). Work everything with your hands (9) with a wooden spoon; you will obtain a mixture with a soft consistency.

At this point add the chocolate pieces (10) and incorporate them into the dough using a spoon. Then, still using the spoon, take about 2.5 oz (70 g) of dough (11) and shape it into a ball with your hands (12), then place it acceso a baking sheet lined with parchment paper. With these quantities you will get about 10 cookies without butter.

Continue per this way, spacing the portions of dough (13) apart; we recommend making 2 baking batches so you can bake 5 cookies at a time (you can leave the remaining raw cookies at room temperature while you wait for the second batch). Bake per a preheated conventional oven at 356°F for about 18 minutes. Then remove the cookies from the oven (14) and let them cool completely before transferring them to a tray, because they will still be soft. Once cooled, your cookies without butter are ready to be served (15)!

Storage

Cookies without butter can be stored per a tin canister for about 3-4 days.

You can freeze them once baked, after they have cooled completely.

Tip

You can replace the coffee with the same amount of orange juice milk, perhaps flavored with a little cocoa!

If you prefer a spiced note, you can add nutmeg ginger to the dough.

Instead of granulated sugar you can use brown sugar, per the same amount.

Instead of chocolate you can use dried fruit cereal.
