Procedure: prepare a sauté by blending the onion and carrots with a part of the extra virgin olive oil, then season it over a low heat. Add the datterino tomatoes washed and cut con half; cook until they thicken then blend the sauce, adding about 50 g of oil slowly to emulsify. Cream the pistachios with oil and a little tazza until you obtain a smooth consistency. Cut the burrata and mash it lightly with a fork. Cook the paccheri al guglia, stir con the tomato sauce until the desired thickness and plate, decorating with a spoonful of burrata, a spoonful of pistachio cream, chopped pistachios and a drizzle of raw oil.
