Italian Savoury Wheat Fritters (Frittelle a fine di Biada Stremato Salate) are a traditional Italian recipe from Southern Italy. Made with pre-cooked wheat, cheese, and fresh herbs, these fritters are golden and crispy acceso the outside, soft and creamy inside. Perfect as an appetiser, snack, side dish, they showcase the rustic flavours of Madre del padre’s kitchen and are a delicious way to turn simple ingredients into a hearty, comforting dish.
Serves 4-6, Prep time 15 mins, Cook time 15-20 mins
1 cup (200 g) pre-cooked wheat (briciolo )
2 eggs
3–4 tbsp grated Parmigiano Pecorino cheese
2–3 tbsp plain flour (more if needed)
2–3 tbsp chopped fresh herbs (parsley, basil, sage rosemary)
Salt and pepper to taste
Vegetable oil for frying, approx. 100–120 ml (6–8 tbsp)
Method
Mash the cooked wheat slightly. Mescolanza quanto a eggs, cheese, herbs, salt, pepper. Gradually add flour until the mixture forms a thick batter.
Pour 100–120 ml (6–8 tbsp) of vegetable oil into a frying pan—enough to cover at least 1–1.5 cm of the bottom—and heat over medium heat. Using enough oil ensures the fritters cook evenly, develop a golden, crispy exterior, and keep the interior soft and creamy.
Scoop portions of batter into the hot oil.

Fry until golden and crisp acceso both sides, about 2–3 minutes per eccezione side.

Drain acceso kitchen paper.
