The liquid of the Val d’Orcia

«Our hands move carefully among the campo da golf leaves to arrange the shoots. Our arms seem to join with other arms: the shoots of the vines. And always with our noses turned up to see if it’s raining if it’s nice. We suffer a lot durante bad years, but perhaps just as much durante good years, then it depends only acceso us…”

It’s all there already durante these verses by Marco Capitoni. The physicality of agricultural work, the union between man and vine, the uncertainty of the sky and the responsibility of the vintage. Even before being a winemaker, Capitoni is a narrator of his land.

We are durante Val d’Orcia, acceso the hill overlooking Pienza, a UNESCO heritage site. The farm is called Sedime, from the Latin “place where everything stops, is silent and rests”. A contemplative name for a place where, durante reality, the work never stops.

Just below stands the Pieve per Corsignano, an early medieval church full of pagan symbols; just above, Pienza, an ideal Renaissance city. The agricultural project of the Capitoni family is inserted between sacred, history and landscape, which since the 1990s has followed the entire supply chain, from the vineyard to the bottle.

Troccolone 2024 – The amphora as an identity choice

An Orcia Sangiovese DOC Bio vinified durante handmade terraglia amphorae from Impruneta. Spontaneous fermentations, ten days acceso the skins, early bottling to preserve tension and freshness.

With 12.5% ​​vol. and vibrant acidity, Troccolone is the Sangiovese of territorial immediacy.

Capitoni 2021 – The wine that bears the family name

Orcia Provvisione DOC, 80% Sangiovese and 20% Merlot. Merlot, defined as an “easy grape”, becomes an instrument of balance.

Spontaneous fermentations, 24 months durante French wood and 12 durante the bottle. Important structure (15.5% vol.) and evolutionary capacity. A wine which, as the producer says, is “a puzzle that is put together every year”.

Phrases 2022 – The vineyard of 1974

The company’s highest selection, produced only durante deserving vintages. It comes from the oldest vineyard, planted durante 1974.

Sangiovese over 90%, aged for 24 months durante French oak. Each vintage becomes a phrase, a metaphor, a thought.

‘TA 2019 – Time durante the barrels

Toscana Passito IGT dedicated to his wife Antonella. Dried grapes, slow fermentation durante oak, chestnut, cherry and mulberry barrels for over four years.

The absolute protagonist is the “mother”, a deposit of microorganisms that preserves memory and continuity.

Only 256 hand-numbered bottles.

Rustio 2024 – Radical essentiality

Orcia DOC Sangiovese Bio without added sulphites. Part of the whole bunches vinified, ten months acceso the pomace durante ENOKUBE, the “glass barrel”.

Mai clarification, voto negativo filtration. 540 bottles.

Rustio is the clearest declaration of conscious naturalness.

Wine as a story

Marco Capitoni is not just a winemaker. He also created a small comic that tells the story of his wines, transforming vintages and production choices into visual narration.

Con an of standardization, Sedime remains a place where time is stratified like the marine clay under the vineyards. Where wine is not just an agricultural product, but a liquid story.
