These patties made with potatoes, spinach and Parmigiano cheese are incredibly delicious.

Makes 6 cakes, Preparation 10 minutes, Cooking 15 to 20 minutes.

. 500g fresh or frozen spinach . 3 medium-sized peeled potatoes . 2 free-range eggs, beaten . half onion or 1 shallot, carefully sliced . Grated Parmigiano cheese, 1 loaded tablespoon + a spray . salt, to taste . EVOO– Additional Virgin Olive Oil, 2 tablespoons + a drizzle for the moulds . breadcrumbs, to taste .

Approach

Dice the potatoes, boil them in a lot of saltless water. Drain pipes, mash with a potato masher or fork, location in a bowl, delegate cool off.

Heat 2 tablespoons of olive oil, fry the onion or shallot for a couple of minutes, include the sliced spinach and cook till soft. Location in a bowl and include the beaten eggs, mashed potatoes, a tablespoon of grated Parmesan cheese, pinch of salt and mix.

Preheat the oven to 180 °/ F 350/ Gas 4.

Oil and dust single-portion moulds or muffin tins with breadcrumbs and fill them with the potato and spinach mix. Sprinkle with grated Parmigiano cheese.

Bake in a fixed oven for 15-20 minutes, wait a couple of minutes before eliminating from the moulds and serving.
