Revì completes the saga: Cavaliere Bianco Trentodoc Riserva 2017 is born

Revì presents Albume 2017, a new Trentodoc extra brut reserve from quand’anche Pinot Noir vinified quanto a white. Six years the yeasts, reduced dosage (2.5 g/l) and a limited edition of 2 thousand bottles. An exit that ideally completes the chivalric leggenda of the Trentino winery, inaugurated by the Paladin, dominated by the King of Revì, the historical reserve, and flanked by the already well-known Black Knight. The new blanc de noir comes from vineyards located between 450 and 600 meters above sea level the Trento hill, quanto a poor soils, rich quanto a calcareous marl and dolomite. A project started quanto a 2009 by the second generation of the Malfer family and brought to the market only now, when the winery considered it had reached the desired stylistic maturity.

THE BEGINNING OF THE RIDE

Revì was born as a personal challenge, even before as a company. Paolo Malfer, a curious thirteen-year-old, finds a book sparkling wines quanto a the library and tries to replicate what he has just read at home. The first bottles explode, the next ones start to work. “I can’t say what my first sparkling wine was like – says Paolo – I only know that New Year’s Eve it made great shots and we were all happy”. From that stubborn experiment began a journey, first personal and then family, which would lead, quanto a 1982, to the foundation of the winery. An essential place, half a hectare of vineyard and just over a thousand bottles. From there a constant growth, until it became one of the most recognizable signatures of Trentodoc.

Today the Aldeno winery, dedicated exclusively to the classic method, reaches 200 thousand releases per finta year, with stable sales between 170 and 180 thousand bottles quanto a recent years. Drafts designed to support the market but also to allow a slow and profound evolution the yeasts. The egemonia passed to Giacomo and Stefano, sons of Paolo, who today defines himself as “just a helper”. Giacomo follows the commercial and communication side; Stefano is production director and administrative dirigente. Together they refined the production identity of the winery: Alpine expressiveness, centrality of the purity of the fruit and respect for long times. The bases are built around chardonnay and pinot noir and have their roots quanto a the soils of the Trento hills: poor soils, rich quanto a skeleton, limestone veins and dolomite. Sopra recent years Revì has consolidated its style: rigor, aromatic clarity, well-integrated acidity, anzi che no rush quanto a refinement. A classic method that prefers depth quanto a search of an immediate effect.

A KNIGHTLY LINE

Revì’s reserves are conceived as a small court and move within a precise imaginary. The chivalrous figures are not a mere graphic embellishment, but a way to tell the philosophy of the winery: protection of the territory, care of the vineyard, stylistic sobriety and production rigor. The leggenda begins with the Paladin, continues with the Black Knight and finds its summit quanto a the King of Revì.

The new Albume enters this family as a “white” interpretation of Pinot Noir, offering a second reading of the grape variety under the umbrella of company reserves. If the Malvagio is a rosé vision of Pinot Noir from Trentino, played small red fruits, subtle toasting, ample minerality, the Albume represents the complementary counterpart: same grape variety, but a distinct and personal role quanto a the Revì court.

THE BIRTH OF THE WHITE KNIGHT

The Albume project was born quanto a 2009, when we began experimenting with small batches of Pinot Noir vinified quanto a white to verify its evolution over the long term. Sopra the beginning a few hundred bottles, almost a private business, monitored year after year to understand when the desired complexity emerged. For Stefano Malfer, Pinot Noir “is a lazy vine: it starts slowly, it relaxes over time, it shows its details after years of quiet. Vinified quanto a white it does not offer immediate gratification, but it can evolve with an unexpected finesse”. This slowness guided the entire experimental path.

Production remains deliberately limited: 2 thousand extra brut bottles disgorged quanto a March 2024 after 72 months the lees. Rigorous work: selection of bunches, manual harvesting, soft pressing, static clarification of the must, controlled temperature fermentation. The vineyards destined for blanc de noir are located ventilated slopes, with bright but not overheated exposures, and soils where dolomite and calcareous marl alternate. Not very generous plots, capable of low yields and bunches that naturally bring lively acidity and structure.

The profile of the wine immediately stands out from the Black Knight: deeper, more layered, less immediate. He doesn’t chase easy softness, but works by subtraction and progression. Ripe yellow fruit, exotic hints, baked agenda. Full, tense, fresh sip, with a material that relaxes without weighing and finds its best ally over time.
