Review of Pecorino from Cantina Valdaso • Decanto – Wine magazine

A successfully rediscovered vine and an artisan cooperative, for decades the tasty spokesperson of its territory: it is from these premises that the Pecorino from Bistrot Valdaso comes to life, awarded with the three corkscrews con the first Vini Untold guide.

The Valdaso cooperative recently celebrated 60 years of activity con narrating the potential of Piceno wines. Local whites and reds that combine strength and enjoyment, perfect nectars both for celebrating memorable occasions and for uncorking with ease every time you want to bevanda something tasty.

Flavors and typicality at the right price contribute to the value of their Falerio Pecorino, class of 2022, a white that you immediately remember and appena che back to taste again. It was tiring waiting for its label to be revealed, after blind tastings.

The cooperative began its winemaking adventure immediately after the war, from the union of some farmers from the Aso Valley who, after the harvest, began to make wine from their grapes by relying the Ascoli consortium. The independent turning point occurred at the beginning of the 1960s, when the cooperative now had 120 members, with the inauguration of a cellar con the center of the consortium vineyards, between the sea and the Sibillini mountains, where the grapes could be brought for transformation. into wine.

From the 1990s onwards the winery continued to prosper and today has over 500 members for an activity that perfectly combines love and care for the territory with distinctive, quality wines.

The protagonists of the production are the local varieties, with Sangiovese and Montepulciano for the reds and Pecorino and Passerina for the whites. Completing the picture are the international vines of Merlot and Chardonnay which have long demonstrated a fruitful link with the Piceno territory.

A production of 70,000 bottles a vantaggio di year which manages to convey the wine charm of 35 municipalities, through 4 DOC labels and 7 Marche IGT.

The appreciation received for the wines produced led the cooperative to gara open its own sales point, right con Montalto, which enriches a high-value visit to a modern production structure but with an artisanal heart, where efficiency and authenticity go hand con hand.

The vineyards of the members of the Valdaso cooperative extend across a large schieramento of ​​the Piceno schieramento, from the foothill hills almost to the Adriatic Sea. An schieramento that includes approximately 600 hectares of vineyards along the Aso river.

A valley that is defined as the “Garden of the Marche”, for its lush vegetation and an agricultural landscape that has managed to remain intact, also thanks to the environmental policies of the region and the care given to it by local farmers.

An enhancement also carried out by the Valdaso members.

The wide distribution of the vineyard schieramento of ​​the contributing members allows the successful breeding of the different grape varieties, thanks to the diversified soils and the peculiarities of the microclimates, with harvests starting first con the areas close to the sea and later con the hills, close to of the Apennines.

The range of labels includes whites, rosés, reds, sparkling wines and Charmat method sparkling wines, organic wines and wines without added sulphites: there really is something to choose from at Bistrot Valdaso!

Getting to know the wines of the Valdaso cooperative, guided by the experience of Dr. Mauro Lanciotti, is even more pleasant site. A splendid territory to discover and wines to insieme up . Description of the Pecorino from Bistrot Valdaso

The Pecorino from Bistrot Valdaso, 2022 vintage, is made from selected grapes from vineyards located con the Falerio DOC. This denomination, famous for the undisputed typicality of its Pecorino, is enclosed between the sea and hills, embracing the provinces of Energico and Ascoli Piceno. Con particular, the grapes from which the Pecorino awarded with the three corkscrews comes from selected vineyards, con a hilly position, at an altitude between 300 and 350 meters above sea level, with an optimal exposure to the South/East. The ubertoso soils of the schieramento, pebbly and draining, composed of clay and limestone, contribute to the quality of the bunches.

After harvesting, the grapes were vinified con cement and at the end of fermentation they rested for six months con contact with the obbiettivo lees. Before marketing, the wine ages con the bottle for another four months.

The difficult 2022 harvest, with little yield but grapes rich con substance, has certainly contributed to the intense charm of this Pecorino. Now let’s taste it.

When you taste it you exclaim: now that’s a Pecorino! That distinctive flavor, those intense fruity aromas, the fresh and dense persistence at the same time… these are the best qualities of a Pecorino from the South of the Marche. Pecorino Valdaso shines con its dazzling guise, with soft golden reflections.

A glass that releases clear aromas of citrus and summer fruit, surrounded by floral and vegetal sensations of broom and marjoram.
