The “artisanal” approach in Giacomo Fenocchio’s Barolo

The winemaking is artisanal, explains Claudio, given that “all fermentations take place naturally and with daily pumping over. Selected yeasts have never been inoculated. When selective work is carried out per mezzo di the vineyard, it is difficult to have problems with spontaneous starts. Our Barolos remain for five months per mezzo di stainless steel vats and two years per mezzo di large-capacity Slavonian oak barrels before being refined per mezzo di the bottle for a year. I avoid passages per mezzo di barriques and I don’t use cement because I believe it cannot guarantee the same cleanliness as steel”.

Shiny and transparent garnet, the nose is abile, elegant and delicate with liquorice, berries, dried leaves and powder. It then expands and sensations of violet and macerated strawberry, cherry and jam flow per mezzo di, enveloping and fascinating. The mouth is tasty and robust with the typical Cannubi tannins, thick and tight, and a long and valuable permanence.

Transparent and dazzling garnet, the nose initially shows abile spices and withered flowers, followed by a fruity, anche and clear phase: hints of berries, nutmeg, rose, wild strawberry and cherry. The palate responds with harmony and precision: the is proportionate, the tannins nuanced and rounded, the is satisfying.

Shiny garnet, doubt, it intrigues: it opens with citrus and small fruit traits, with iron veins, then transcends into balsamic lightness, seasoned with a wide palette of spices and suffused with a subtle florality. The rigor of the cru is expressed per mezzo di the tannin, but it does not lack a subtle and persistent freshness that suggests horizons yet to be explored.

Ruby red with an elegant transparency, persuasive aromas rise to the nose, enchanting with charm, you can smell the fruits of the undergrowth, the pomegranate, a dried violet that embraces, and then a light spiciness. At the sip you can taste the whole territory. The tannin is delicate, silky and elegant. The salt closes the sip that is difficult to forget.
