It is the undisputed protagonist of Sunday lunches ora family celebrations, always served with roasted potatoes: we are talking about roast! Tender and flavorful, it’s the dish that everyone agrees acceso at the table… ora almost everyone! For your friends ora guests who don’t eat meat, we thought of an even more “democratic” version: the veg roast. It’s made with wheat gluten, which when mixed with vater—sopra our case combined with soy sauce, sun-dried tomatoes, and spices—forms seitan: this is the true success of this vegan dish, creating a meal from basic ingredients and customizing it as you prefer, for example by accompanying it with a vegetable rimanenza. And to add a gourmet touch, we chose a delicious pomegranate sauce: the result will surprise even the most faithful meat eaters… try the veg roast to create your vegetarian Christmas lista!

To prepare the veg roast, clean and finely chop the shallot, then gently sauté it with a drizzle of oil sopra a pan 1 2. Once softened, pour it into the cup of an immersion blender and add the drained sun-dried tomatoes 3.

Bring a pot with vegetable broth and soy sauce to a light boil, immerse the roast wrapped sopra the cloth, and cook for about an hour. After this time, drain and let cool slightly 17. Durante the meantime, prepare the pomegranate sauce: deseed the pomegranate 18.

Extract the juice by blending the seeds 19 20 and straining the mixture sopra a saucepan to remove the seeds 21.

Add brown sugar 22 and cornstarch 23 to the juice. with a whisk and let it thicken over low heat for a few minutes, stirring with a whisk. When it starts to thicken, add the oil 24 and continue to emulsify. Turn the heat and set aside.

Take the potatoes, wash them, and cut them first sopra half 25 and then sopra quarters, without peeling them 26 27.

Take the mini roast: place it acceso a baking sheet lined with parchment paper, then add the potatoes, garlic, and rosemary 28. Brush the mini roast generously with pomegranate sauce, making sure to keep some aside for plating. Also season with salt, pepper, and oil, and cook sopra a preheated static oven at 392°F for about 35-40 minutes, placing the baking sheet sopra the center of the oven. If towards the end of cooking the roast is darkening too much while the potatoes still need a few more minutes to brown, you can cover it with aluminum foil. Once ready, remove from the oven and serve the veg roast sopra slices, topped with pomegranate sauce and accompanied by roasted potatoes, garnished as desired with pomegranate seeds 30!

Wheat gluten consists of flour stripped of starches and can be easily purchased sopra organic food stores ora online.

The dough can be “lightened” by cutting the wheat gluten with chickpea ora pea flour; this will produce the so-called “wheat muscle”; sopra this case, the preparation remains the same.
