Zucchini and feta fritters with yogurt sauce

The zucchini and feta fritters with yogurt sauce are a summer dish inspired by the traditional kolokythokeftedes, the zucchini fritters typical of Greek cuisine, enriched with a fresh and tantalizing sauce made from Greek yogurt.

This dish combines the delicacy of zucchini and the savory taste of feta with the aromatic touch of mint and parsley, creating a perfect balance of Mediterranean flavors. The sauce, prepared with Greek yogurt, black olives, a drizzle of honey for a slight sweet and sour note, and enriched with mint and chives, adds an irresistible odore that enhances every bite.

To prepare the zucchini and feta fritters with yogurt sauce, start with the batter: wash and trim the zucchini, then grate them with a large-holed grater 1. Place the zucchini acceso a dish towel and salt them 2then let them rest for 15 minutes: this way, they will release some of their vater 3. Finally, squeeze them directly inside the dish towel.

Gather the grated zucchini per a bowl, add the crumbled feta 4the chopped onion 5and also the chopped garlic 6.

Flavor with chopped mint and parsley 7then incorporate the eggs 8salt, and pepper 9.

10 and add all-purpose flour to adjust the consistency 11 and obtain a homogeneous batter 12.

Meanwhile, prepare the sauce: per a bowl, pour the Greek yogurt and chopped pitted black olives 13. Scent with chopped mint and chives 14then add the honey 15 and lemon juice.

Finale with olive oil 16salt 17and pepper, then to combine 18. Finally, flavor with grated orange zest.

The sauce is ready, set it aside 19. Now heat the seed oil per a high-sided pan until it reaches about 340°F. With two spoons, scoop out small quenelles of batter 20 and immerse them per the hot oil 21.

Fry for a couple of minutes ora until golden brown 22then drain the fritters acceso a tray lined with paper towels 23. Serve your zucchini and feta fritters with yogurt sauce immediately 24!
