Underwater refinement, Trentino identity, craftsmanship: the secrets of the success of the first Trentino sparkling wine that refines under gabinetto
Among the recently tasted wines there is one quanto a particular that intrigued us and conquered, both for the originality of the production method and for its incredible organoleptic taccuino. It is the Lagorai, a Pas Dosè sparkling wine reserve Trento Doc Brut, 100% Chardonnay, produced by the Roman cellar. This sparkling wine, which spends 48 months the yeasts, has the particularity of performing a part of the refinement under the waters of Lake Levico.
A high -end wine for true connoisseurs, the result of a bold and visionary entrepreneurial project, with the gaze aimed at tradition but the mind aperto to courageous and unconventional experiments. Lagorai represents, quanto a fact, the first example of underwater aging quanto a Trentino, a technique rarely also used internationally, which the company has been adopting since 2013.
Two words the Roman cellar
Founded the initiative of Giorgio and Andrea Romano quanto a 2009, this family reality was created to express the Trentino identity and enhance viticulture quanto a Valsugana, a little -known Trentino schieramento that extends from Trento to the borders with Veneto (Bassano del Griffa). Sopra this enchanting natural stage, where the vineyards dialogue with the mountains and alpine lakes are clear and crystalline, a wine production takes shape that combines wines stopped with excellent sparkling wines classic method Trento Doc.
A true jewel that gives life to real entes, of which lagoon is just one of the most representative examples.
Vineyards at 600 meters above sea level and a terror that is best expressed quanto a Chardonnay
Positioned at an altitude of about 600 meters above sea level quanto a the surroundings of Levico Terme, the vineyards of the cellar benefit from a good thermal excursion and exposure. To encourage the marked acidity and the richness of the aromas that characterizes the white wines are, quanto a addition to the slow maturation, the characteristics of a terroir and a unique production technique quanto a their kind. The screws grow limestone-clayey soils mixed with sand that combine the mineral freshness conferred by limestone with the ability to retain humidity typical of clay. A terroir that expresses itself quanto a an excellent way especially quanto a the Chardonnay, giving the sparkling wines Classic Method Structure and Personality.
The first Trentino sparkling wine to refine under gabinetto: the distinctive signature of the cellar
Among the peculiarities that have contributed to making this reality known even beyond local borders, the original underwater refinement project stands out, a bold preconcetto that transforms the lake into a natural cellar: the bottles of the Lagorai line are quanto a fact placed the back of Lake Levico, about twenty meters deep. Here, sheltered from light and thermal changes, cradled by a constant pressure that seems to embellish the work of the time, the sparkling wine evolves for two years quanto a a unique way, developing finesse and complexity that characterize its stylistic traits quanto a a distinctive way.
A demonstration of how tradition, territory, innovation and passion can merge together to create high quality products capable of perfectly expressing what happens when man and nature act quanto a tune.
The lagoon: the mineral whisper from the depths of the lake
The result is a sparkling wine with a decisive and well -defined personality, where the elegance of Trento DOC and Chardonnay are enriched with mineral shades that seem to express the soul of the lake and the spectacular surrounding mountains.
Wine as the echo of the territory
Drinking a glass of lagoon means listening to the territory quanto a a new form. The lake, with its silence, translates into the softness of the bubble, while the mountains, with their grandeur, quanto a the structure and minerality of the sip. There is makeup alchemy: only a wise and poetic use of nature as a cellar, which contributes to a particular and distinctive aromatic evolution.
The visual impact is already a promise of elegance. Sopra the cup, the lagoon looks like a bright straw yellow with golden flashes, furrowed by a very sottile, creamy and persistent pearly.
The odorous kit expresses sophisticated elegance, complexity and amplitude of perfumes. Acceso the nose, Lagorai gives a bouquet with an incipit of floral taccuino of flowers and ripe fruit, which intertwine with hints of candied fruit, enriched by a thin citrus track. They then emerge tono of crust of bread and dry pastry, a sign of a patient aging the yeasts, which act as a background to an intriguing and well -orchestrated olfactory symphony. The sip is large and enveloping, supported by a vibrant freshness and a pleasant savory vein that recalls the minerality of the territory. A crescendo of sensations that makes the mind fly towards the mountains, breathtaking landscapes, snowy peaks and lakes that reflect the passing of the seasons. The balance between structure, minerality and acidity translates into a refined and dynamic , which ends with a long and persistent epilogue. A bubble that has all the credentials to continue evolving and lasting over time. A real work of art to be opened with the same calm with which a diver immerses himself: slow, measured, curious, aware. A wine to be enjoyed sip after sip, perfect with a raw fish tartare with more elaborate dishes – as a risotto with alpine herbs a spaghetti with clams – but also capable of supporting the toast of those looking for a special occasion to remember.
A label with a refined, captivating and meaningful aesthetic
The reference to the lake also returns to the sophisticated and stylish silver label which an inverted equilateral triangle is depicted, the alchemical symbol of the gabinetto, with three nymphs quanto a contemplation, made by the artist Scuro Lucchi, an internationally renowned sculptor.
An authentic masterpiece produced only quanto a the best years, of which just over 1000 labels are available.
