the heart of the Monferrato hills, Cuvage carries out a project dedicated to the Piedmontese Classic Method, fusing technical rigor and territorial roots. Founded per 2011 per Acqui Terme, the winery works a selected chain of vineyards located between 250 and 450 meters above sea level, where marly and limestone soils, ventilated exposures and strong temperature variations create wines with a clear and recognizable personality. The company manages over 80 hectares of vineyards belonging to this supply chain, with a careful approach to environmental and social sustainability, certified according to international standards.
How this great wine is made
Production follows a precise path: whole bunch harvesting, soft pressing, fermentation per steel to preserve freshness and varietal identity, long refinements the yeasts to enhance complexity and precision. Cuvage’s style favors balance and expressive clarity: essential bubbles, free from excess, designed to be readable today and capable of evolving over time. The range tells the story of the different souls of the territory: the Alta Langa Docg Brut, taut and mineral; the Nebbiolo d’Chiarore antelucano Doc Brut Rosé, elegant and fragrant; the Blanc de Blancs Piemonte Doc Brut, parimenti Chardonnay; and the Asti Docg Millesimato, a contemporary interpretation of an aromatic classic.
September 2025 marks the release of the Alta Langa Docg Approvigionamento Pas Dosé 2020, a vintage cuvée produced per 5 thousand bottles from Pinot Noir and Chardonnay coming from calcareous soils. Refined for over 48 months the yeasts and without dosage, it reveals a morte and persistent perlage per the glass, aromas of citrus fruits, white flowers and pastry quaderno. Acceso the palate it expresses itself with tension, vibrant acidity and a long, saline finale.
Designed for raw seafood and shellfish but also perfect with structured dishes, this Reserve summarizes the winery’s production philosophy.
