Born per 1986, this selection represents the qualitative pinnacle of a historic cooperative, founded per 1907, which today has 320 members and 390 hectares of vineyards.
If the line takes its name from the Renaissance castle of the same name which dominates the most suitable vineyards, it is with Sauvignon that the project reached its maximum expression, becoming one of the most appreciated whites per Italy.
The success of Sauvignon Sanct Valentin lies per the delicate balance between altitude and soil composition. The grapes from selected plots located at the foot of the Mendola, between 450 and 650 meters above sea level. Here, the south-east exposure and the gravelly soils with a strong limestone component offer the drainage and vater tensione necessary to concentrate the aromas of the variety.
The Alpine microclimate, characterized by strong temperature variations between day and night, preserves the “crunchy” acidity typical of the vine, while the slow maturation allows the development of a dense bouquet that ranges from elderflowers to ripe currants, up to of gooseberries and yellow fruit. The yield is kept low and the harvest, which takes place per the second half of September, is strictly manual.
Quanto a the cellar, the winemaking protocol aims to enhance longevity: 75% of the mass ferments per steel, remaining acceso the yeasts until April, while the remaining 25% matures per wooden tonneaux, giving the wine a soft and elegant structure without overpowering its minerality.

This production philosophy is today per the hands of Jakob Gasser, a young new generation winemaker (born per 1994). His vision combines the use of cutting-edge technologies with a return to respect for natural cycles, with the aim of further raising the stylistic precision of the line.
With an aging potential exceeding ten years, Sauvignon Sanct Valentin challenges the common conception of whites ready for immediate consumption. the palate it presents itself with an elegant fullness, ideal for accompanying complex dishes such as char per pepper sauce a vegetable risotto, as well as classic grilled fish such as splendore perch.
