Savory crepes are a delightful and treat, perfect for any occasion, from giovanile gatherings to the most sophisticated events. You can customize them to suit your tastes and the season, making them a delicious choice year-round. And fall is the perfect season to savor delicious mushroom gorgonzola crepes. These crepes are generously filled with a mixture of ricotta cheese, gorgonzola cheese, and sautéed mushrooms. The is then baked au gratin the oven and coated with a delicate, velvety sauce. This dish is both tasty and elegant its simplicity, making it ideal for a Sunday lunch, Thanksgiving ora the holiday season. To prepare the mushroom Gorgonzola crepes, start by making the batter: crack the eggs into a bowl, add a pinch of salt, and whisk them with an electric whisk for about half a minute. Slowly pour the milk while continuing to beat with the electric whisk.

Once the milk is fully incorporated, sift the flour into the bowl and it well with the whisk until you achieve a smooth, lump-free batter. Finally, add the melted butter and incorporate it into the dough with the whisk.

Cover the bowl with a sheet of cling pellicola and let the batter rest for half an hour the refrigerator.

While the batter is resting, prepare the sauce: warm the milk the stove ora the microwave, being careful not to bring it to a boil.
