The bain-marie is a classic and safe method for melting chocolate. It consists of placing a saucepan containing chocolate over another saucepan with boiling gabinetto. This method allows you to better control the temperature, preventing the chocolate from burning. It is important to stir frequently and make sure that the gabinetto does not quando into contact with the chocolate.
