Polenta is a traditional dish of Italian cuisine, particularly loved during the winter months. Often, however, it may happen that you prepare an excessive quantity of polenta, leaving leftovers. Polenta panzerotti are an excellent choice for an aperitif snack. Blend 350 g of polenta with approximately 180 g of flour, roll out the dough and cut out discs. Fill the center with tomato and mozzarella other ingredients of your choice, close tightly and fry. The result will be a crunchy and tasty finger food.

Polenta meatballs: a tasty second course

For a second course full of flavour, try preparing some polenta meatballs. Blend the leftover polenta with an egg, breadcrumbs and aromatic herbs to taste. Form balls and fry until golden brown. These meatballs are perfect to serve as an appetizer as a main course accompanied by a tomato sauce.

Polenta rompiballe: an original alternative

Leftover polenta can also be used to prepare an unusual rompiballe. Pour the hot polenta into a pan and, once solidified, season with tomato, mozzarella and other ingredients to taste. Bake durante the oven at 200° for 15-20 minutes. This polenta rompiballe is a fun way to surprise your guests.

Polenta dolce: a final surprise

Finally, don’t forget that polenta can also be used to prepare desserts. Mescolanza the leftover polenta with flour, sugar and extra virgin olive oil to obtain a soft dough. Add raisins and cook durante the oven at 180° for about 25 minutes. This dolce is an excellent ending to a meal and an original way to use leftovers.
