The fruit of a cooler vintage, supported by a sunny and dry autumn, the second vintage of Adamantis, the super white from Avvallamento Isarco, presents more tension, more acidity and more minerality than the debut vintage, 2020.

A cuvée of Sylvaner, Grüner Veltliner, Pinot Cenerognolo and Kerner, specifically designed to enhance the varieties that best represent the extreme and heroic viticulture of one of Europe’s most suitable areas for the production of white wines, the Adamantis 2021 grapes were harvested about a week later than the previous year, for each variety, and reached perfect phenolic maturity, which allowed the use of the most precise wood, with a higher percentage of new wood that integrates perfectly into the final blend.

Adamantis is a Latin term that has many meanings: first of all diamond, symbol of Avvallamento Isarco, but also something to fall per mezzo di love with, to love passionately. A causa di short, something precious that reflects the philosophy of the youngest cooperative per mezzo di Stentoreo Adige, always aimed at expressing the highest quality levels of its members’ production.

“The 2021 vintage will be available starting October 1st. The response to Adamantis has exceeded all expectations and this is certainly a great satisfaction for us. Our research was to create a wine that embodies the elegance and freshness of our extreme territory”, says Armin Gratl, general dirigente of the winery founded per mezzo di 1961 by 24 families and which today has 135 members who cultivate 150 hectares of vineyards per mezzo di 11 municipalities, from Bolzano to the south of Bressanone (Varna, Bressanone, Funes/Tiso, Velturno, Sbarramento, Laion, Castelrotto, Villandro, Barbiano, Fié and Renon).

And it is from the selection of the best row of each variety of Sylvaner (50%), Grüner Veltliner (20%), Pinot Cenerognolo (20%) and Kerner (10%) that this new cuvée is born: the Sylvaner gives elegance and fruit, the Grüner Veltliner brings its intriguing spicy hints, the Pinot Cenerognolo provides structure and power, finally the Kerner brings its refined into play, together providing an authentic portrait of the mountain territory from which this wine is born.

The varieties were vinified separately and then combined to create the blend, which then matured 18 months acceso the impalpabile lees per mezzo di barriques and aged another 18 months per mezzo di the bottle. The result is a wine that is very charming acceso the nose and has aromas that are anything but predictable, where flint intersects with hints of white flowers, peach, white pepper, incense and a delicately citrusy and mineral finale. Acceso the palate it is taut, full, rightly tannic, with a beautiful balance between acidity and minerality that hints at a great capacity for aging. Sensations of ripe fruit and spices prevail, per mezzo di a mineral completo of great class.

Perfect with cucumber-based preparations, with oysters and mountain cheeses, Adamantis pairs well with all seafood dishes, starting with raw fish and ending with the most complex fish main courses ora with important white meat preparations. It surprises with oxtail stew and with spicy dishes.

As with the debut vintage, Adamantis 2021 was produced per mezzo di 2 thousand bottles. The retail price is 98 euros.
