Established in 1952 by a brave group of young wine makers, Cembra Cantina di Montagna is not just the historical cooperative winery of the Cembra Valley, however a bastion of brave viticulture in the heart of the Dolomites. An unpolluted treasure chest, north-east of Trento, which protects a special terroir, created by centuries of geological history.

THE CEMBRA AREA

In Between 500 and 900 meters above water level, along a river-glacial valley that climbs up from the Lavis plain to Südtirol, solid vines discover their home on slopes that are hard to gain access to and with excessive gradients of nearly 40%. The Ora del Garda, the advantageous wind that sweeps away the humidity, the red gold of the porphyry, 300 million years of age volcanic soil and the ideal temperature level variety, do the rest, offering the red wines of the Cembran winery an uncommon character and a minerality that is at times apparent.

A surge of freshness and taste, an enjoyable beverage and a particular stamp of sophistication are likewise the outcome of cautious operate in the cellar. White wines that defy time, efficient in aging with dignity and offering unanticipated feelings.

THE FIRST CEMBRA CUVÉE AND ITS NEW COURSE

Zymbra, Cembra’s very first cuvée, happily translates the strange attributes of this mountain winery. To compose it, Stefano Rossi, a real Cembrano and wine maker of the cage for 12 years, picked the lots of Müller Thurgau, Chardonnay and Riesling, amongst the most distinct vines of the valley, picking the very best expressions of 2019, within the vineyard park of roughly 300 hectares, took care of with devotion by 320 contributing members, real custodians of the valley. The name of the white wine, an ancient toponym of the valley, wishes to admire the originality of this location, a couple of kilometers from Trento.

Cembra’s brand-new course consisted of just monovarietal red wines in order to improve the grapes from the most representative parcels of the area in a much more clear method to produce an optimum of around 40 thousand bottles, while all the remainder of the harvest goes to Cantina La-Vis.

Stefano Rossi, wine maker of Cembra Cantina di Montagna

The option to present a cuvée was discussed extremely well by Stefano Rossi himself. “We desire and should inform a journey, in picking the most appropriate vineyards of the 3 white grape ranges that are symbolic of the valley, Müller Thurgau, Riesling and Chardonnay. Beginning with the Avisian hills we increase to 500-600 meters above water level, where we discover the Chardonnay in the local location of Giovo. Then we progress and get to the town of Cembra, at 650 metres, where we raise riesling. Before showing up in Val di Fiemme in Grumes – which in dialect suggests gritty – we discover at 850 meters some plots of müller thurgau with definitely strange attributes, particularly with concerns to freshness, fragrance and surge.

” Zymbra needs to combine the very best of the 3 ranges put at 3 various elevations: fragrant volatility of the müller, frankness, taste and verticality of the riesling, and chardonnay as a characteristic d’union for balance, structure and softness. This is the concept we wish to put in the glass. Our variety currently includes 4 red wines that detail the colors of the valley one by one, this cuvée is a various method to represent the subtleties and intricacy of Cembra”.

TASTING NOTES

In addition to the current addition, the leitmotif of the Cembra white wine collection are the monovarietals: the whites Müller Thurgau, Chardonnay and Riesling, accompanied by a Pinot Noir and a TrentoDoc recommendation to close the variety.

Zymbra Igt Vigneti delle Dolomiti 2019

Müller Thurgau, Chardonnay and Rhine Riesling, in equivalent parts, are grown utilizing the Guyot and Trentino pergola techniques, on soils abundant in porphyry and sand. A cuvée from among the best and newest vintages of the last years, which significantly extended the harvest, instead of by hand, with the riesling gathered in the very first 10 days of October. This permitted the grapes to ripen gradually and entirely, maintaining the stability of the lots as much as possible. In order to improve the intrinsic attributes of the ranges, the pushing is soft, fermentation and aging for about 2 years, generally in steel, other than for a single Chardonnay barrique. After mixing, a more 18 months rest in the bottle follows before marketing.

At sight it provides a fantastic gold color. The olfactory intricacy is well supported by rejuvenating aromas, so that unique and tropical notes mix harmoniously with medical herbs and mountain flowers. The sip, abundant, juicy and lively, is crossed by a mouthwatering path that extends the citrus and extremely consistent surface. Just 3,000 bottles produced.

Oro Rosso Pas Dosé Trentodoc Riserva 2018

100% Chardonnay from vineyards in between 600 and 750 meters above water level. For pushing, which is extremely sluggish and fragile, a Marmonier vertical press is utilized. The base white wine ferments in steel, fermented in the spring following the harvest, for a minimum of 4 years on the yeasts before disgorgement.

Brilliant straw yellow decorated with fantastic golden streaks. Stylish odor that opens on sweet feelings of yellow fruit, followed by memories of lemon cream that close on notes of dried fruit. A sort of grand cru of the Cembra Valley, where various elevations are played to balance all its elements. Entire lot vinification, just steel for fermentation and aging.

Fresh, explosive, the nose never ever tires, the maturity of an in some cases unique yellow fruitiness, the extreme notes of mountain flowers, the freshness of grapefruit, the aromaticity of sage. Stress, taste, verticality, a red wine that gets on an acidic Alpine freshness that provides an extremely consistent and sometimes mentholated surface.

Riesling Trentino Doc 2021

Rhenish Riesling trained utilizing the Guyot system and gathered in early October. Short maceration on the skins, fermentation and improvement generally in steel. A little part of the must, the one from a little overripe grapes, is frozen and after that included throughout bottling, so that the recurring sugar is around 7 grams per liter in order to stabilize an extremely sharp level of acidity.

Extremely enjoyable feelings, interesting scents of white peach, apricot and candied orange enthusiasm which start to turn towards a light understanding of flint, extremely classy and above all incorporated. The sip is improved, covering, not muscular, leaving grains of salt in the mouth and a surface with a netting impact that closes with a somewhat tannic part that dries the taste buds.

Chardonnay Trentino Doc 2021

Chardonnay born in the center of the Cembra Valley in between 500 and 600 meters above water level. In this vintage, for the very first time, the cuvée is likewise made up – for about a quarter – of grapes originating from the opposite of the valley, the orographic left of the Avisio stream, in the town of Lona-Lases. A north-facing vineyard with low yields, where a rejuvenating and drying breeze blows even in August. Grapes with a leatherlike and gritty skin that have actually handled to provide a sense of mountain to this white wine, which, due to the boost in typical temperature levels, has actually ended up being hard to discover at not so severe elevations in the “more traditional” vineyards of the Cembra Valley. Around 20% of the mass develops in a brand-new and an utilized barrique, while the rest in steel.

It has a straw yellow colour, the nose is great and fragile with its notes of ripe yellow fruit and a light spiciness. On the taste buds an advanced sophistication accompanied by an excellent structure and an enjoyable level of acidity.

Pinot Noir Trentino Doc 2020

A Pinot Noir that translates the area, thanks above all to the reduction for many years in the wood aging part and a minimum of partial inhibition of the malolactic fermentation. In balance in between factor and sensation: the most progressed part, likewise in regards to color, more seated and broad, that is, the 70% maturation in oak barriques with malolactic fermentation. In contrast to that 30% of “cembranity” in the constant look for minerality, dexterity and freshness of fruit, accomplished thanks to higher contact with the skins (nearly a month), cold pre-fermentation maceration, fermentation and improvement in steel, consisting of a part in Tava amphora “sur lie” for 5 to 5 months.

A fantastic deep ruby, complex however not invasive, on the taste buds it is the punch of red fruits, fragrant and medical herbs, hay and mountain flowers. A sip that remembers a cherry in alcohol that ends up being fresh and yummy, excellent structure and tannins in a state of grace. A white wine that does not require time however will last in time, strong, vibrant and undaunted similar to individuals of the Cembra Valley.
