Farinata with zucchini and pecorino fondue—straight from Liguria—really shows what makes Italian food special. The basic farinata recipe? Uses chickpea flour. Spread the pecorino fondue over the surface 22 and garnish with a few fresh mint leaves 23. Serve your chickpea farinata with zucchini and pecorino fondue immediately, while hot 24.
