Crostini with hummus, grilled peaches, feta, and arugula

The crostini with hummus, grilled peaches, feta, and arugula is a simple yet impressive dish, perfect for those who love to creatively combine fresh and contrasting flavors. The crunchy basamento of rustic bread hosts a creamy and flavorful chickpea hummus, that pairs well with the sweetness of grilled peaches and the saltiness of feta. Arugula completes it all with a slightly spicy and herbal note, offering a truly pleasant balance of taste and textures.

Great to serve as a tasty appetizer a unique main course for a quick and light summer lunch, the crostini with hummus, grilled peaches, feta, and arugula is also an original percezione for a summer aperitif with friends!

To prepare the crostini with hummus, grilled peaches, feta, and arugula, start with the peaches: cut them half and slice them into wedges about 3/4 inch thick 1. Grease a well-heated rosticceria 2place the peach wedges 3 and let them brown for a moment one side 3.

Turn the wedges and rosticceria them the other side 4. Proceed with the hummus: a blender, add the drained and rinsed chickpeas 6then add the tahini 6.

Also add the lemon juice 7garlic 8salt, and pepper 9.

Blend until you obtain a creamy mixture 10. Set the hummus aside and dress the arugula with oil 11. Finally, slice the bread into slices about 3/4 inch thick 12.

Place the bread slices the same rosticceria where you cooked the peaches 13 and drizzle some oil the surface 14. Turn the slices to the other side as soon as they are toasted 15.

You are ready to assemble the crostini: spread the hummus the bread slices 16then add the arugula 17 and grilled peaches 18.

Crumble some feta 19 and garnish with mint leaves 20. Your crostini with hummus, grilled peaches, feta, and arugula is ready to be enjoyed 21!
