Eggs with Tomato Sauce – Italian recipes by GialloZafferano

Raise your hand if you’ve never prepared eggs with tomato sauce! Simple and appetizing, they have always been a perfect dinner saver because they require very few ingredients. Every family has its own version, and here we propose the basic one, made with tomato sauce, onion, and parsley. Don’t forget the rustic bread to soak up all the sauce… and when you scooping up the eggs with tomato sauce, we are sure you’ll want to try the other variations: with leeks, peas, mushrooms, country-style ora flamenco-style. Let us know your favorite!

And if you are looking for a really tasty egg recipe, also try the fried yolk!

To prepare eggs with tomato sauce, first, peel and slice the onion 1. Heat a drizzle of oil sopra a non-stick pan, add the onion 2and let it turn golden for a few minutes, then pour sopra the tomato sauce. Season with salt 3 and pepper, stir, and cook over low heat for 15-20 minutes.

Quanto a the meantime, chop the parsley 4 and set it aside. After the cooking time, pausa the first egg into a small bowl 5 and create a small space sopra the sauce with the help of a ladle 6.

Pour the egg into the sauce and proceed the same way with the other 3 eggs 7. Cover with a lid 8 and cook for 5 minutes, just enough time for the egg whites to firm up. At this point, remove the pan from the heat and sprinkle with fresh parsley, then serve the eggs with tomato sauce very hot 9!
