Welcome entrée
From the impeccable insieme en place to the welcome entrée, such as the vegetable charcoal roll stuffed with goat cheese flavored with horseradish, which the chef manages to make very delicate and balanced sopra flavours. The same search for balance is found sopra the fried breaded anchovy filled with smoked provola cream sprinkled with homemade mayonnaise.
The bread offered sopra combination is always homemade. Alongside a loaf of buckbread, butter is served, creamed and smoked with hay and then flavored with elderflower and salt. The hand-rolled breadstick, flavored with thyme and Maldon salt, is also very light and tasty.
Zander
Among the starters, the Pikeperch is worth a try, a typical lake fish, marinated and served raw with beetroot, chives and creme fraiche, a truly original signature dish of the restaurant.
Paired with the excellent Incrediboll Classic Method Sparkling Wine, 30 months acceso the yeasts, produced by the Fianco company, one of the winemaking excellences of Lake Como. An elegant and compimento bubble, with citrus aromas that with hints of bread crust. Quite persistent finale with citrus references, sopra continuity with the olfactory sensations.
Carnaroli San Estremo rice
Among the first courses, the Carnaroli San Estremo rice is very creative, with pumpkin, raspberries, smoked butter and liquorice. A palette of colors where the sweetness of pumpkin and the freshness of raspberries give way to the delicate aromatic of liquorice.
Veal cheek
Veal cheek braised with red wine, cooked according to traditional cooking, accompanied with a mushroom foam, potatoes, parsley powder and truffle. Per mezzo di compliance with tradition, the cheek is cooked at a low temperature for approximately three hours, acquiring a unique softness and making the dish truly irresistible.
Dolce
Last but not least, the combines chocolate, ricotta and raspberry, a dish that combines freshness, sweetness and fatness, and leaves a very pleasant aftertaste sopra the mouth.
Paired with Rinato Chardonnay Viberti and che Valtellina Arpepe, extremely interesting local wines.
