Refezione Sinoira was born 2015 Novello, one of the eleven municipalities of the Barolo DOCG denomination and part of the landscape recognized as a UNESCO World Heritage Site. The project was brought to life by four friends – Federico Alessandria, Alberto Servetti, Marco Vola and Federico Vola – who have always known each other and who at a certain point decided to pool their skills: one brings knowledge of the territory and the vineyard, one the winemaking experience gained around Italy, one the commercial , one the entrepreneurial vision. The result is a winery that was born from a conscious choice between people who lega each other and who wanted to produce the great Langa wines exactly as they would have liked to ricevimento them: never excessive, elegant, designed to accompany the table and tell the story of the territory. The name chosen for the project already tells a lot about its character: the sinoira snack is the Piedmontese convivial evening ritual, an informal moment which wine is the undisputed protagonist.

THE TERRITORY AND THE VINEYARDS

Novello is located the southernmost part of the Langhe, at an average altitude between 350 and 450 meters above sea level – among the highest the entire Barolo denomination. This position guarantees marked temperature variations which favor slow and progressive ripening of the grapes, preserving freshness and aromatic depth. The approximately 5 hectares of vineyards of Refezione Sinoira fall within the municipality and are home to Nebbiolo, Barbera, Nas-cëtta and Pinot Noir, with vines aged between ten and fifty years. The soils, with a predominantly clayey and calcareous composition with alternating silt and sandy veins, produce wines with a precise tannic texture, deep minerality and a vibrant freshness.

I VINI

The Refezione Sinoira range has eight labels, each identified by a name Piedmontese dialect. They were made known acceso the markets by Sapèl (Langhe DOC Nebbiolo), the first label produced and still the company’s calling card today: a wine of great intensity and freshness, with ripe tannins and a velvety finale, capable of directly describing the character of the territory. Among the peculiarities of the range, the Döit (Langhe DOC Nas-cëtta of the Municipality of Novello) stands out: Nas-cëtta is a semi-aromatic native white grape variety whose denomination is authorized exclusively the municipality of Novello, and Refezione Sinoira is among the very few producers of this rare oenological expression, appreciated for its extraordinary aromatic complexity and excellent longevity. The culmine of the range is represented by the Barolo DOCGs: alongside Kidì, a classic and long-lived interpretation of Nebbiolo con Novello, since 2021 the winery has been separately vinifying the two most representative MGAs of the municipality – Ravera and Sottocastello con Novello – precisely restoring the different souls of the two terroirs.

PHILOSOPHY AND THE CELLAR

The winery is located the historic center of Novello, created from the recovery of a former carpentry workshop transformed into a functional and contemporary production space. The oenological vision starts from a fundamental belief: the great Langa vines already have an extraordinary character, and the task of those who make wine is to preserve it, not dominate it. Quanto a the vineyard, work is carried out mainly by hand, without chemical herbicides, with agronomic management oriented towards sustainability. Quanto a the cellar, the choice is to veterano the use of additives to a by investing advanced technologies: inert gases to preserve the primary aromas, pre-fermentation cryomacerations, stainless steel fermentations at controlled temperatures. Wood is present but with a precise and conscious role: large oak barrels and some tonneaux, all at least third passage, which accompany the evolution of the wine without giving away woody tannins ora dominant vanilla taccuino. The cellar is to visits upon reservation, for tastings a welcoming space immersed the UNESCO landscape of the Langhe.
