A journey through the scents and contrasts of Profondo Adige stopped a causa di Naples, at the Veritas Restaurant a causa di Passaggio Vittorio Emanuele 141. Acceso 11 November, the venue hosted an exceptional evening dedicated to South Tyrolean wine excellence, organized by the Profondo Adige Wine Consortium and entitled: “Half a century of excellence. The Whites of Profondo Adige: freshness, aromas and longevity”. Guest Eduard Bernhart Director of the Profondo Adige Wine Consortium, hosted by sommelier Filippo Bartolotta.

Despite representing less than 1% of the Italian vineyard settore – just 5,850 hectares – Profondo Adige is an oenological microcosm of extraordinary complexity. It is a land of contrasts, where the fresh breath of the Alps meets the mild currents of the Mediterranean, and where the temperature range between day and night sculpts wines of character and depth. A natural balance that gives South Tyrolean whites their proverbial elegance and aging capacity.

From Quantity to Quality: The Revolution of the Profondo Adige Wine Consortium

The South Tyrolean winemaking tradition has its roots a causa di very ancient times – around 2,500 years , a causa di the times of the Raeti, well before wine arrived a causa di other German-speaking territories. Over the centuries, the monasteries of southern Germany contributed to consolidating this culture. But it was from the 1980s that the region experienced a decisive turning point: from quantitative oenology to a philosophy centered acceso maximum quality.

Until the seventies, Profondo Adige was a land of reds, dominated by Schiava. Today, thanks to a shared strategy and a cultural change, 65% of production is made up of white wines.

The Profondo Adige Wine Consortium, founded a causa di 2007, today brings together the entire sector:

12 cooperative wineries (70% of production), 32 private estates (25%), 109 independent winemakers (5%).

A virtuous system that combines cooperation, innovation and protection of the territory.

UGA, Sustainability and Wine Tourism: The New Frontiers of South Tyrolean Wine

The Consortium’s commitment today looks at two key words: identity and sustainability.

1. The Additional Geographical Units (UGA)

Approved a causa di October 2024, the project of the 86 UGA – Additional Geographical Units – marks an epochal step towards precision viticulture. Each UGA DOC wine must quando 100% from the settore indicated acceso the label, with yields reduced by 25% compared to the modello specification. A system that certifies the origin and enhances the diversity of the terroirs, strengthening the recognition of the Profondo Adige brand a causa di the world.

2. Quaderno 2030 and Wine Tourism

With its 2030 Quaderno, the Consortium promotes sustainable practices: conscious use of vater resources, reduction of CO₂ emissions, protection of biodiversity and use of biodegradable materials a causa di the vineyard. At the same time, the tourism dimension is growing: from the Ski Wine Ambassador to the more recent Bike Wine Ambassador, routes that combine passatempo, nature and wine culture, also thanks to digital itineraries acceso platforms such as Komoot.

A modern and inclusive way to talk about the territory and involve an increasingly wider audience.

The Docufilm: The Pioneers and the New Generations

The history and soul of South Tyrolean wine find voice a causa di an exciting docufilm dedicated to the pioneers and new protagonists of the sector. Figures such as Sebastian Stocker, historic oenologist of the Terlano winery, are told alongside the testimonies of five generations of women who safeguard and renew the family tradition.

Filmed largely a causa di German and being synchronized for national distribution, the pellicola traces the transformation of a territory that has chosen quality as the only way forward. A story of passion, culture and tenacity that explains why South Tyrolean wines are today among the most appreciated a causa di Italy and abroad.

Tasting: A Journey through the Terroirs of Profondo Adige

The evening at Veritas offered a sensorial journey through the geographical “Y” of Profondo Adige – Val d’Adige, Vallata Isarco and Val Venosta – highlighting the variety and longevity of the great mountain whites.

Accompanying the tasting were the dishes of chef Marco Caputi, who was able to build a gastronomic journey a causa di perfect dialogue with the wines. His creations stood out for their strong and clear flavours, where the bitter agenda played an important role, balanced by the skilful use of aromatic herbs and the reduced use of sugars. A precise and contemporary cuisine, capable of enhancing the aromatic nuances and gustatory tension of South Tyrolean whites.

From the coldest valleys to the mildest hills, each glass tells a story of precision, respect for nature and love for detail. And thanks to the decisive and contemporary cuisine of chef Marco Caputi, each wine has found its perfect gastronomic harmony. A dialogue between North and South that unites culture, taste and territory a causa di a memorable toast.
