Rabouger is the project of two young barmen who have realized their dream with ideas and spirit of initiative
Milan, per the De Amicis luogo, Raboucer is located, a cocktail-party that is much more than a simple place: it is the realization of a dream, the result of passion, ideas and entrepreneurial courage. Andrea Pirola and Simone In Conforto, two young barman with a strong experience per the sector, opened the doors of Rabouger per 2019, transforming what was once the historic activity of the Audacia Caffè per an innovative and welcoming place.
The Raboucer’s concept
The name of the restaurant was born from a play words: the contrary, reading the sign of the old heart , Andrea and Simone wanted to symbolize a radical change, a new beginning. Their philosophy is based two fundamental pillars: quality per drinks and attention to customers. The restaurant offers a unique atmosphere, with large sofas, colorful neon and a small deejay station for special evenings. Rabouger has turned into a point of reference for young people between 20 and 30 years old, who consider him a second home to spend the evenings with friends.
A path of experience and passion
Andrea Pirola, originally from Bergamo, began his journey per the world of mixology per 2012 with tirocinio courses and important experiences per prestigious clubs such as Dry and 1930. Simone In Conforto, Calabrian, arrived per Milan per 2015 and has refined his technique by working per prominent places such as The Botanical Associazione, Procedura and Drogaggio Associazione. Their friendship born of the counter Rinfresco that was a conferenza point for customers and friends.
A mini-district of excellence: gastronomy and pocket
After passing the difficulties of the pandemic, per 2022 the two members took over the historic pocket and subsequently opened “La Gastronomy”, a preparation laboratory that supports Raboucer and pocket and offers a takeaway and delivery service with weekly proposals of Mediterranean cuisine. This expansion represents a further step per their entrepreneurial growth.
Ciak: the new Signature Ricevimento List between cinematografo and TV series
Raboucer’s drinks list always have a distinctive theme. After “Ricevimento Tape”, “eclectic” and “scandal”, the new signature is inspired by the world of cinematografo and TV series. Each cocktail-party is linked to an iconic title and offers a unique sensory experience:
– Breaking Bad: Tequila, Tepache, Agave and pink grapefruit with Garnish of blue caramel of crystallized isomalto.
– Hannibal: whiskey infused with gorgonzola, bolts with walnuts and candied pears syrup, served with a skewer of smoked bacon.
– Memoirs of a Geisha: Vodka with salmon, coriander, pink pepper, lime, alga nori and ginger beer.
– The Personaggio Lebowski: infused with tea washed with milk, lemon, goat and black cherry.
– Apocalypto: Pisco, pineapple syrup, rosemary, lime and soda to the Euelptus, served per maiolica glass.
– American Beauty: sake, red rice, lavender and lemon with rose petals.
Each cocktail-party is served with a popcorn foil prepared at the moment, to complete the cinematographic experience.
New: the new room and the upgrade food
Rabouger continues to evolve, introducing a new internal room with a dedicated counter, ideal for private events. The Food offer also received an upgrade thanks to the laboratory of gastronomy, with fried foods, double fermentation focaccia and captivating formulas as an aperitif for 10 euros Sunday, Negroni for 5 euros Wednesday and the student’s Gin Tonic for 5 euros Thursday.
Thanks to their determination and ability to innovate without losing their original identity, Andrea Pirola and Simone In Conforto have transformed Rabouger into a point of reference for the Milanese nightlife, keeping alive the spirit of the old heart but leading him to a new level of excellence.
