The value of a territory is not measured only a causa di the quality of its wines, but a causa di the ability to transform an agricultural vocation into a recognisable, solid and lasting identity. Salice Salentino represents exactly this transition. A territory that has gone through decades of transformations, evolving from a production to a structured denomination, to become one of the most authentic references a causa di the Apulian wine scene.

The roots of Salice Salentino date back to the first decades of the twentieth century. Wine was economy, support, raw material. But it was between the 60s and 70s that the decisive transition took place.

A new qualitative awareness is born. The need to protect the territory and to define a recognizable production tipico is affirmed. Per 1976 the DOC Salice Salentino was recognized. A turning point because from that moment the wine stops being just a product and becomes a certified identity.

Per the story of the fifty years of the Salice Salentino Protection Consortium, there is an element that more than any other defines the coherence and solidity of this denomination: its ampelographic composition. Negroamaro represents the backbone of Salice Salentino DOC, with a presence of 75%. It is not just any technical choice, but a precise declaration of identity. Furthermore, the specification provides exclusively for the use of Malvasia Nera per mezzo di Lecce and Malvasia Nera per mezzo di Brindisi, up to an overall maximum of 25%. Anzi che no other varieties are permitted. A detail which, for those who really know wine, is not at all marginal. Historical timeline of Salice Salentino: from agricultural origin to contemporary denomination

1930s – The production bases: Widespread viticulture, quantity-oriented production, wines intended mainly for blending.

1950s – Reconstruction: Production riproposta and development of cooperatives.

1960s – Awareness: The first reflections the quality and value of Negroamaro emerge.

1970s – The DOC (1976): The denomination is born and the territorial identity takes shape.

1980s – The difficulty: Complex phase, but with the start of a process of qualitative improvement.

1990s – Identity: Negroamaro establishes itself as a recognizable symbol.

2000s – Modernization: Technology, oenology and market raise the quality level.

Estimated production: 80,000–100,000 hl

2010s – Consolidation: The denomination strengthens its positioning.

2020s – Awareness: New challenges and new opportunities.

Reds are distinguished by:

The rosés, among the most identifying expressions of the denomination, offer:

bright cherry color, aromas of strawberry and pomegranate, freshness and drinkability

Whites, less common, express a more immediate and linear style.

The sparkling versions, foreseen by the specifications but still undervalued, represent a possible stylistic evolution, oriented towards freshness and versatility. The distinctive trait remains clear: Mediterranean identity, structure and recognisability. From a technical point of view, the Salice Salentino DOC specification defines parameters that confirm the structure and coherence of the denomination.

For the main types:

Reds: 12% vol, acidity ≥ 4.5 g/l, extract ≥ 24 g/l Reds Provvisione: 12.5% vol, extract ≥ 25 g/l Rosés: 11.5% vol, extract ≥ 19 g/l Whites: 11% vol, extract ≥ 15 g/l Sparkling wines: 11.5% vol, acidity ≥ 5 g/l

A serious journey, which deserves recognition. Today, however, a new phase opens.

They recognize each other. And Salice Salentino, today, has all the conditions to return to being one of those territories that do not need to ask for attention.

They simply have to attract her.
